You know, this is a great idea! I still have a lot of random fruit teas from working at a local gourmet supply shop, this sounds like a terrific thing I can do for friends on Valentine's... with several times to practice beforehand ;)

I used rosehip tea to poach, candied ginger instead of raisins, and madera instead of Marsala... It was really nice! First time making a sabayon but I loved the result :)

I made this the other night with out the plums and replacing the red current jelly with honey and fruit tea bags with lemon and ginger tea bags and it was fantastic!

I remembered watching one of your videos where barry could not crack an egg let alone separate it. Now seeing him doing it smoothly I realized that he has improved a lot. All credits goes to ben of course :D

Tried this and it tasted absolutely delicious! I added Grand Marnier instead of the wine. I thought it just gives it that wee bit extra taste.

When it comes to food you can try anything, unless it has a warning label. Or is still moving. Or smells really off. Or the dog won't eat it...never mind don't listen to me do exactly what Ben tells you to and nothing more!

I kind of get the feeling Ben and James set aside FIRE time for the other three, due to a vague sense of unease and the lingering belief that if they don't they'll come in one day to a burning crater after SOMEONE manages to SOMEHOW turn a simple fruit salad recipe into some kind of mystical flamethrower cocktail.

@Dracula Tod because its quite a pale colour so in the glass it's concentrated in colour and looks red but Ben only used a small amount so the colour didn't show up

I suppose you could probably substitute the fruit tea with something like masala chai. I don't know how it'd affect the colour, but that probably wouldn't matter against the cinnamon, clove and anise flavours you'd be adding to this dish.

any fruit that wouldn't break up easily in the water- so no berries but apricots, peaches and quinces would be good.

Maybe the wine wasn't red to begin with but maybe like just dark brown in a large volume but when he spooned it out it was yellow? Idk. MAGIC

SORTED Food I have a question. I'm allergic to fruit from trees when raw. When they're cooked in extreme heat or frozen, it kills the enzyme I'm allergic to. So basically I can't eat an apple from a tree, but I can have apple pie. Would poaching have the same affect as if it were baked? I really want to try this recipe, but I'm not familiar with the poaching process. Thanks for the help!
