ABout the hard meat. Nigerians make a lot of foods that have meat that is a bit hard, this is because Nigerians (like many other africans) like to make their meat properly well done. They season the meat well and make it in a way that while it is hard it isn't dry. The meat is hard and chewy which might bother many western people, but what this has led to in Nigeria is that Nigerians have very healthy jaws and teeth. It has been shown that eating soft foods all through out your development actually causes problems with the development of the masticatory system, which is why crooked teeth and jaw problems are more common in people who were grown up with a diet of a lot of soft bread and other soft foods. While this is partly genetic, it has been shown that environment (in this case the types of foods you eat) might actually play a more important part than your genes in the development of your masticatory system.

Suya is definitely not meant to be hard. And it's a night food that is eaten in all parts of Nigeria, especially the South. Not just the East.

Suya isn't meant to be hard and is not meant to be on skewers and is meant to be sprinkled with suya pepper which is orange and is meant to come with fresh tomatoes and raw onions. Sorry I just love my suya a lot 😂😂

Proud Nigerian kid over here. My mom makes the best dishes, honestly. I know a whole bunch more from childhood since both my parents are Nigerian and immigrated to the U.S. a few months before my twin sister and I were born. However, I would like to point out that Suya originated from northern Nigerian, not eastern. It’s popular in all regions of the country, though. The type that was shown off here is a tad different than the ones you’ll find in other African restaurants. They usually use softer and chewier meats that’s easier for kids and older people to chew.
