Cute clip, but not the Doppler effect. Think of a race car going by you super fast. Due to the high speed of the car and the relatively low speed of sound, as the car zooms by, you hear a change in the pitch (not just the volume) of the engine sound because the frequency of the sound waves reaching your ears being affected by the high speed of the source of the sound (the car). With the hedgehog, you're just hearing it get closer or further away, so it becomes louder and quieter, but the pitch isn't affected because it isn't moving nearly fast enough.
