I currently can't give an exact number, since I don't have the equipment to test for alcohol content. It will likely be 2% or less though, and will not have much sugar content since that's what the yeast feeds on.

I’m a bit confused to what exactly is this? Have you fermented the fruit like you do when making sauerkraut or is this a vinegar like when you make apple cider vinegar or is a wine haha I’m confused as to my knowledge it can’t be a ferment as you add salt to that and making vinegars from fruit takes a month so what is this I’m very curious? Thanks 😊

No worries! I completely understand where the confusion comes from. So, without getting into too much chemistry detail: this is a yeast(ethyl alcohol) fermentation rather than lacto fermentation. It’s closer to how beer or wine is fermented and therefore will kind of taste somewhere in the middle of those 2 things. I compare it to maybe a low alcohol sour beer in terms of flavor (it’s very unique though and that’s just a rough comparison).

Yes it will, but I cannot definitively say it will completely stop fermentaion from occuring. Buying organic pineapple & organic ginger can give you some extra wiggle room, potentially. (If you have access to these, of course)

Unfotunately no. The pineapple skin is what has the necesary bacteria that drives the fermentation.
