coconut oil, vg butter for the pan
1 banana
½ cup (50g) rolled oats
pinch of salt
dash of cinnamon
optional: 1-2 tsp sugar or agave
serve with yogurt of choice, fruit etc

80ml (1⁄3 cup) non-dairy milk
1 tsp apple cider vinegar
3 tbsp vg yogurt or applesauce
1⁄2 tsp vanilla extract, optional
85g flour (⅔ cup plus 1 tsp)
21⁄2 tsp baking powder
pinch of salt
1 - 2 tbsp sugar
1-2 tsp coconut oil, sunflower seed or vg butter for frying*
1-2 bananas
serve w extra yogurt, berries, chocolate spread etc
*a light grease yields the best result, make sure to use non-stick!

for the chickpea egg:
⅓ cup (45g) chickpea flour
generous pinch of salt
½ tsp baking powder
optional: dash of curry powder, paprika, black pepper
⅓ cup plus 2 tbsp (100ml) non dairy milk
2 tsp apple cider vinegar
1-2 tsp oil for frying
1 large tortilla (the size of your pan)
tomato slices
avocado slices
1-2 handfuls spinach
1 handful vegan cheese
sesame seeds, vg chili mayo
(or anything else you want to add)

2 cups rolled oats (180g)
50g protein powder (½ cup)
¼ tsp salt
1 tsp baking powder
2 bananas, mashed
375ml non dairy milk (1 ½ cups)
75 chocolate chips (⅓ cup plus 1-2 tbsp)
250ml - 375g vanilla or plain yogurt, more if needed (1 cup - 1 ½ cups)
1-2 tsp unsweetened cocoa powder
additional agave syrup for serving

~ ½ can chickpeas (200g)
1-2 drizzles of olive oil
1 tsp white wine vinegar
1 handful of baby carroty, halved or quartered
generous pinch of salt, pepper
400g unsweetened soy yogurt (14oz)
2-3 tbsp fresh dill, minced
1 clove garlic, crushed
1 drizzle olive oil
1 tsp white wine vinegar
¼ tsp salt or to taste
pepper to taste
serve w: fresh bread, olives, the roasted veg/beans, sesame seeds, cumin, more spices, micro greens…

#6 Gochujang Fried Rice Bowl w tofu 9:50
1 block firm tofu (200g = 7oz)
1 tbsp cornstarch or flour
generous pinch of salt
1 - 2 tsp veg oil
2 handfuls fresh baby spinach
2 servings cooked rice, preferably sushi rice (i had boiled ½ cup - ⅔ cup dry rice)
for the sauce:
½ tbsp gochujang (adjust to taste!)
2-3 tbsp soy sauce
1 tbsp olive oil or roasted sesame oil
1 tsp agave or sugar or rice syrup
1-2 tsp sesame seeds
1 tbsp white wine vinegar
¼ cup water (60ml)
salt, pepper to taste (taste test after adding the rice)

As for your sleep problem I think some relaxation therapy would help you and making a habit out of it as well. Just rest in bed and surround yourself with something that calms you down and makes you feel cozy and precious. Watching some videos, movies, reading fanfics, listening to music, thinking of someone you like... just something that will occupy your mind and relax your body. If you worry about something specific, then tell yourself it´s not really a big deal or it will get solved in due time, why should it ruin your evening. I know what that´s like and this really helps. Now I just fall asleep right away because I get tired. I hope you sleep well soon!! 😴🌃

I can definitely relate to having sleep issues! A few things that have helped me are- no caffeine after noon (or even earlier if possible), no screen time an hour before bed, turn your phone screen to red in the evening (helps block the blue light), body scan meditation and/or gentle yoga in the evening to help wind down❤

Mina i have the same problem!!! Once I didn't sleep all night cause I was so stressed that I need to get up early for classes lol I ended up crying cause I couldn't sleep ahahah. I noticed that reading before bed helps me a lot

In the last few months, it feels like you've really grown up, gained confidence and really found your own personal vibe in your videos :) congrats! As for the sleeping thing: what has helped me is an experiment by the Mythbusters (lol) in which they found out that just lying there, calm and with your eyes closed, is almost as effective as sleeping for your brain and body. Takes out the pressure a bit.

I always fall asleep easily no matter what 😂 even after a big conflict I fall asleep really fast. My "secret" is just exhaustion 🙈 I am always so so tired, because of my full days. I need the sleep and I love to sleep. But I don't know if this is helpful 😂 love the recipes btw 😍 I always get sooo many inspirations from your Videos 😍

I can relate to not sleeping well. I've been a super light sleeper my whole life. The most helpful thing is exercise. I also do my best to get outside first thing in the AM. Also, no screens before bed.

A good evening routine surely helps with falling asleep, I had trouble with that for a long time. At around 8 I just start to slow down everything, get a journal entry done or just write something, and if it's just 1-2 sentences (yes, fanfiction, haha), that somehow eases my mind enough to maybe need 5-10 minutes when I am in bed to fall asleep

Definitively going to try the wrap and yogurt bowl ❤. For your sleep maybe try progressive muscles relaxation, or sometimes I do maths (like taking a big number and subtracting 7 or 3).

Hii mina i loved your video!!! You are right as soon as i saw the savory yogurt bowl recipe i was like this is a lot like our cuisine ( im turkish) in fact without the chickpea we have a appetizer called " cacık " its almost the same, it goes super well with heavy dishes because it freshens up your mouth. Also i love watching your videos theres something comforting about them❤❤

I have the same problem falling asleep. But I have been able to stop stressing about falling asleep by listening to audiobooks. Childrens books age 9-12 work best for me. Interesting enough to keep your mind focused, but not interesting enough to stay awake for. I still don't fall asleep very fast, but at least I am not frustrated about it anymore.

Hi Mina, I get panic attacks at night when I am trying to sleep and what has helped me relax is just reading one or two chapters of a comic! I find that as u try to concentrate and read u already doze off a little has become a routine for me and the panic attacks are rarity now :)

Lovely video as always, Mina! I also have trouble falling asleep, and i think it's not a super healthy method but for the past few years I've resorted to putting on videos of people just talking about light topics (no bgm, sound effects or loud screaming) to give my brain something to focus on other than my swirling thoughts. Hope you find something that works for you soon!

I've been doing those scrambled oats for so long but i add an egg 🫣 if u take off the egg and scoop some of the mixture into cookie shapes and put them in the oven for 20minutes at 180° (roughly) u have oatmeal cookies! (I also love to add to both chocolate and nuts ❤😊)

If you’ll ever doing a weird foods from childhood video I recommend you try putting sour cream on a slice of bread and sprinkle with some white sugar. That’s Polish child fav snack/dessert/breakfast from the ‘00

Lovely video as always! I do really enjoy these making food from… videos! Myself I’m not much of a TikTok user although especially with recipes I feel like many creators share the same on insta - maybe you could still do an instagram version sometime including their viral foodies? I’m with you though - I have huuuge recipe inspiration collections but barely ever go through them again/truly follow a recipe… it’s definitely more loose inspiration and improvising! Although these all look amazing - especially the tiramisu oats and the idea of yogurt bowls is just 🤯 Thank you for the talk sections as well - I really appreciate your personal content, would love more q&as, talks and stuff! Book content, too!!! Not usually a fan of fanfics but I make an exception for the marauders - THE best imao, still waiting for a Netflix adaptation 😂 your hair looks really cute btw 🫶🏻 sorry to hear about your sleep issues - would highly recommend Matthew walkers book “about sleep” (or listen to his podcast episode with deliciously Ella / Ella mills)!! I love your videos so much! I tend to batch cook, but I feel like it makes me not want to eat as many vegetables because I prefer fresher preparations for them. Your videos make me feel like cooking oneish serving at a time can be realistic and doable, and I feel really encouraged by them. I did want to ask -- several weeks ago I watched a video of yours (I'm not sure how recently it was posted) where you made some marinated tofu that you ate cold. I made something loosely inspired by it, and it was SO delicious! But now I can't remember what was in it or find the video it's from. Can you help me find it?

Hi Mina! I love your videos and have been subscribed for a few months now. If you are open to a new recipe, I have a banana pancakes recipe that I love! To a blender add: 3-4 ripe bananas 1.5 cups soymilk 1 tbsp peanut butter 2 flax eggs 1 tbsp lemon juice To a bowl add: 1.5 cups flour, but more may be needed 1.5 tsp baking powder 0.5 tsp baking soda Combine everything in the bowl and add anything you want such as raisins or chopped walnuts, then bake them in a pan and serve. I would be honored if you give this recipe a try! Thank you for taking the time to read this if you did :)
