I've been watching you for about 6 months now, and you inspired me to jump in to getting a smoker, I have been using my clay oven for about 3 years.but Im loving the smoker right now,So thank you.I started my KZbin channel when I got my smoker.but i got a long way to go to you're standers. I like Serrano peppers more than jalapeños, I think they have more flavor and the heat level is higher but dissipates sooner.

Not everyone dips brisket in a sauce. Purists tend to eat it as-is. Keeping the bark intact allows for both parties to enjoy their eating experience.
