Never had sweetbreads much less cooked them. Do they take to marinade pretty good? Or simple just the best way to go?

I've only marinated them once with soy sauce and they were equally as good. I usually do a red seasoning on them and that's my family's favorite way of enjoying them. It really depends on you. Cheers!

Its beef Sweetbreads. Very tasty when cooked right. I'm sure you can find it at a butcher shop. It's a specialty item if bought outside of south Texas but here locally it's available everywhere.

All the recipes say to soak them for at least 5 hours or overnight, then put them under the press overnight, such a turn off! Do you really need to do that?

That's not necessary. You can do either method in the video. Both come out great!
