With the addition of the chipotle gouda cheese pushes the flavor bus across town. My Barrel House Cooker did a great job smoking up this chuck roast and the chuck is a roast that has all kinds of natural flavor. 3/4cup Black Pepper
1/2cup Kosher Salt
1/2cup Seasoning Salt

OMG Chef Johnny!! Another thing to purchase from Barrel House, that BBQ Can looks like another great accessory to my 18C smoker. This weekend I am going to smoke a couple of yardbirds with the EZ Turkey Plus hanger! That sammich is making my mouth water, it looks great!

I remember you commenting about a chuck roast on my channel a few days ago.... WOW that roast came out awesome.... Gotta love that Meater probe ............. I wish I had a good smoker pit... All I got is a 4 foot X 4 foot by 8 foot tall smoker for sausage and Grillades... Oh Tasso also Tasso is the snitz down here....... Perfect in the middle of it.... Just how I like it.... A good ribeye a lil sooner to take off the grill... Your butcher told you right about the chuck instead of a sirloin.... To me sirloin is a lil dry when it's thinner than your thick slab........... I sure do like that can cooker for the veggies..... Gouda I love and I love a French cheese called Conti' Said like Corn Tay Without the R in Corn... It's a very good cheese to go with wine after a meal....... An elderly frenchman turned me on to that....... If I can get a can of KBON 101.1 FM seasoning from my cousin I will ship you one along with a couple window stickers for your trucks...... I sent Papa Texas a can and he loves it..... He did a video with some Brown sugar ribs and KBON seasoning..... Came out great.... Send me your addy on a PM on my channel so I know where to send it......... Plus Tard Mon Ami ~!~!

What would you do differently that might make this same cut of meat more tender? Slower cook? Faster cook? Brine? I usually look for a chuck with lots of fat in it. It's more tender and tastier too. I've come to where I prefer a good piece of properly cooked fat over the meat. Fat and all would go on my sandwich.

I tell ya I started to use a top round or the sirloin tip. I think either of them would be a better choice. But using the chuch I think brining it with something to tenderize it would have helped. Also cooking it longer would have helped it tender up. Thanks for watching and for taking time to comment.

Sandwich looked awesome. I’m seeing a lot of you guys using the Meater thermometer, have you done any testing of accuracy on it? I’m a little turned off by the size of hole it creates but could probably live with that if it compares with the Thermapens for accuracy.

I thought so to and that meat was way over done. I don't think that was the thermos meter though.

Well yes and no. I thi k a little less would have been good If the ends were like the center. But also I cold have taken it longer and go it tender, kind of like cooking a brisket. But it was very good and the thin slices cept it from being to tough to eat. It is not the thermos meter it is the Meater, spelled like meat. Thanks for wathcing and for the comment buddy.

Your butcher's nuts if you're looking for a medium rare cut of beef you probably should have gone with the sirloin or top round like you thought. Not much off the shoulder will get tender unless you low and slow up to 195-200 degrees.

The smoked peppers looked fantastic and that cheese was to die for! I really like using an eye round for a good medium rare sandwich. It's the perfect size to slice up and it comes out nice and tender at medium rare. Thanks for the video !

Thanks Rick I appreciate it. Next time I will go with my instinct. My son actually said it was the best tasting sandwich I have made for him. So It was good but you are right next time we will use a different cut.
