Had the chance to try Crab Curry with Wild Betel Leaf (แกงปูใบชะพลู) in Phuket with my family last time when we visited there. It is one of the most popular dish in southern Thailand. Spicy and pack with flavors, we fall in love instantly with this dish to simply try making this dish at home. Please enjoy! 😋
📝 INGREDIENTS (for 1 - 2 servings )
▪ 0.71oz ( 20g ) Southern Thai curry paste
▪ 3.53oz ( 100g ) crab meat
▪ 2.47oz ( 70g ) Wild betel leaves (Piper sarmentosum) also known in Thai as Bai Cha Ploo
▪ 150ml coconut milk
▪ 1 ½ tsp. cane sugar
▪ 2 Tbsp. Soy sauce
▪ 200 ml water
▪ 3.53oz (100g) WAI WAI Dried Rice Vermicelli
Soak the Dried Rice Vermicelli with room temperature water for 5 minutes
For garnish: cilantro leaf and red spur chili
FAQ: There are 2 types of Betel leaves - Piper sarmentosum and Piper betle. They look similar to one another ,but Piper sarmentosum is widely use in Southeast Asian cooking . Piper betle is used to chew with betel nut (medical herb)

▪ เครื่องแกงกะทิใต้ (ดีปลี) 20 กรัม
▪ เนื้อปูม้า 100 กรัม
▪ ใบชะพลู 70 กรัม
▪ กะทิ 150 มิลลิลิตร
▪ น้ำตาลอ้อย 1 ½ ช้อนชา
▪ ซีอิ๊วขาว (ฉลากเหลือง) 2 ช้อนโต๊ะ
▪ น้ำเปล่า 200 มิลลิลิตร
▪ เส้นหมี่ขาวไวไว (แห้ง) 100 กรัม
แช่เส้นแห้ง 5 นาที ลวกแล้วได้ 240 กรัม
