If you're lazy like me, a really tiny blender or a coffee grinder (that you'll never use for coffee again) will do just fine. Also, I'd bet catfish would work for this just fine. No substituting anything else though, especially the lime leaves.

Oh, and I'm very surprised that you don't use fish sauce. Oh, and you can also see that this is not a central Thai curry because there is no palm sugar.

Looks great! That fish broth would've made the perfect soup base. I've made fish curry before but with a fish stock and coconut cream - that way, the soup base isn't all coconut but still contains that wonderful thick and sweet coconutty flavor.

Hi Guy's, When I saw the title of this video I pictured either whole fish or large chunks; and it didn't really appeal to me. However, when you started pounding the 'Cuda up, it awakened my taste buds for some reason. Weird. I was a little surprised when you ate the lime leaves as well; aren't they supposed to come out? Love your work. Jim.
@MarkWiens9 жыл бұрын
evogardens Hey Jim, thank you. You could also make this recipe with just the sauce and use whole pieces of fish, that works too. Kaffir lime leaves are good to eat, but when they are whole like this they do take a bit of extra chewing but I love the flavor. In other Thai dishes, sometimes the leaves are shaved really finely, and eaten and provide a nice fragrance. Thanks!

@TheLicewine9 жыл бұрын
mark, why is there no "pla" in the name of the dish? I thought I had figured it all out. lol also, you spent 15 minutes to crush the chillies, lemmon grass, garlic, pepper and stuff. most people spend 15 minutes for the preparation of the whole meal. we must be losing somewhere, i.e. either nutrition, flavor, overall experience eating...or, food in terms of cost as a % of disposable income has become to cheap to spend any time on it. or, we have more important things to do, more money making I mean :) I will certainly spend the week end avoiding any pre processed ingredients...I will even grind my own salt. thanks, chris
@Evanescenz9 жыл бұрын
Maybe it's because you can either go with fish (pla) or chicken (gai) making Nam Ya curry as they have pretty similar texture when crushed. My mom makes this too and she prefers chicken maybe because it gives a bit chewier texture.
@MarkWiens9 жыл бұрын
TheLicewine Hi Chris, thank you. Yah, I'm not sure about the name either, I guess it's just a name. Yes I agree with you, and it's worth the effort for fresh food.

It contains fish by default for this dish. It is rare to put other meats.
