Thai Green Curry RECIPE with Fresh Coconut Milk แกงเขียวหวาน Thai Cooking
Gaeng Kiew Wan or Green Thai Curry is so popular
in Thailand. You can enjoy the dish with either steamed jasmine rice or rice noodles (Khanom Jeen).
Gaeng (แกง) means soup.
Kiew (เขียว) is green in Thai.
Wan (หวาน) is sweet.
Hence the meaning of this dish is "a sweet green soup."
In this video I´ll show you how to make authentic Thai green curry with homemade coconut milk.
Many years ago, there was no coconut milk in a can, so I always had to use fresh coconut milk for cooking. I remember when I was a kid, any dish that contained coconut milk was pretty complicated to prepare. We had to crack and grate coconuts. Then produce coconut milk ourselves before cooking.
30 years ago, there was a new trend when canned coconut milk came in the market. Everyone wanted to use this for cooking. Convenience changes taste. After years I realize that dishes with fresh coconut milk taste best.
In this video I´ll show you how to make green Thai curry with fresh coconut milk. It's exactly the same way, how I learned in my childhood.
💠 Ingredients for 2 Servings 💠
330 g Chicken breast
350 g thai aubergines (egg plants)
100 g string beans
50 g Thai Mini-Aubergines (Thai Mini-egg plants)
20 g Thai red curry paste
500 ml Home-made coconut mlik
40 g Palm sugar
2 tsp sea salt
1 tbsp Fish sauce
5 Kaffir lime leaves
35 g Thai Basil
5 fresh green chilis
Instruction:
- Cut the chicken breast into bite-sized pieces. You can also use any type of meat, e.g. beef, pork or seafood.
- Cut the string beans into pieces about 3 cm long.
- Wash and quarter Thai aubergines. After that soak them in salted water so that the color cannot change. Without salted water, the eggplants will turn dark.
- Take mini aubergines off the stems.
- Kaffir lime leaf Preperation. Fold the leaf in half. Then pull off the stem. If the fresh leaves are not available, use the frozen ones.
- Take the basil leaves off the stalk.
- Boil home-made coconut milk over medium heat. Stir constantly so the coconut milk doesn't get burned at the bottom of the pot. After 5 to 10 minutes this will turn into coconut oil.
- Add green curry paste in the coconut oil. When the curry paste smells aromatic, add the chicken. Then add the kaffir lime leaves. Stir constantly until the meat is done. Pour in the rest of the home-made coconut milk.
- Add palm sugar, sea salt, string beans, Thai eggplants, mini eggplants. When the vegetables are done, turn off the heat.
- Season the curry with fish sauce and addThai basil.
