Fresh, zingy and packed full of goodness, this soup or possibly a curry is the perfect way to finish off a productive day! Anything this green has to be super healthy which also means you’re getting so much goodness in one bowl. Fancy packing in some more veggies? We won’t judge, cram in as much goodness as you can!
Ingredients:
2 tbsp coconut oil
2 banana shallots
2 garlic cloves
1 red chilli
5 cm piece of ginger
4 tbsp vegan Thai green curry paste
1 lemongrass stalk
2 kaffir lime leaves
400ml coconut milk
200ml vegetable stock
2 tsp vegan fish sauce
1 tsp sugar
100g baby leaf spinach
120g sugar snap peas
To Serve:
2 tbsp coconut cream
2 tbsp mixed seeds
2 tsp chilli flakes
