Made this tonight for the family and got rave reviews. It's very similar in concept to Shabu Shabu which I've been serving for years, but has so much more flavor and complexity. I doubt I'll ever go back. I made the pork bone broth in an instant pot to save time and the results were fantastic. Scented with the lemongrass, galangal, and kaffir lime leaves I could have just sipped the broth all on it's own. I mis-read the recipe for the dipping sauce on the website and also added some oyster sauce by mistake, but it was still super delicious as well. Highly recommend trying this.
I made it the other day...It was SO GOOD and AUTHENTIC! Took me back to Thailand.. My husband and I both enjoyed it so much that we are making it again today ... thank you!

The egg-white & cornflour "coating" is sometimes referred to as "velveting" - a very useful technique also for tender meats when doing a stir-fry!

The family loved it. Tried it with Prawns, Fish and Chicken. Used chicken stock instead of pork. Was quite flavourful. It was a great experience for the family to do it yourself at the dinner table :). Thanks Pailin.

I've been using Red Boat fish sauce for a while, highly recommended. It doesn't really have much of a fermented funk, more like a clean taste of the ocean. Try it out if you see it.

THAT is exactly how I like hot pots. I ALWAYS marinate my meat (even for any other dishes actually) AND the broth as well. How many time did I see plain boiling water for hot pots (yeah I know the meat and the veggies will eventually flavor it.... at the end of the diner lol. Merci merci and you are a very nice lady.... thank you for your great great recipe videos! i always looking for the original recipes cause i miss lots of foods which i ate at Bangkok. when i ate fried rice and pad thai always there were two sauces. i think one is sliced bird chilies & fish sauce, the other is sliced bird chilies & vinegar. so can i ask some recipes for these sauces? and what is these sauces for? or you already uploaded it? i've searched but i can't find.

I go to this one place that sells “Thai curry” flavored hot pot and I’m just in loveee with it but I’m no longer in the NY area. LOL i can see that fish sauce in Vietnamese brand :) "Phú Quốc" is a place which is famous for traditional fish sauce in Vietnam. That explains why it is kind of expensive :) You get what you pay for :)
