I love Thai coffee so much. I’m really sensitive to caffeine and tend to only drink decaf. I’ve always wondered why Thai coffee doesn’t affect me the way normal coffee does. Now I know! Thanks for a great video.
@ashleynamasondhi5457 жыл бұрын
Thai vendors filter their coffee like that many times for two reasons: 1) sometimes, not all the ground are completely filtered so it's to ensure there's no grounds/powder being served and 2) it helps cool down the coffee a bit (not sure what that does in terms of extraction but I heard the same principle being used when Thai tea vendors prepare tea).
@freedomflyer66103 жыл бұрын
They cool the coffee so when they put it over ice, the ice doesn't melt and dilute the drink. I like to put the coffee in the freezer or fridge to a nice chill before pouring over ice.

I got bored one day and wanted to try this. I used all the same ingredients. Only thing I changed is 2 1/2 teaspoons of Thai Coffee (per cup) and use boiling water, the first time I used warmer water and it created a unpleasant aftertaste. Definitely my first choice in Iced Coffee! Thanks for the video!

In Macau and Hong Kong, some canteen staff also refilter the hot black tea many times, it's said that the hot tea will touch the air as much as possible so that it will become smoother.

@lifereceiver36614 жыл бұрын
Thanks beauty. I tried it immediately with whatever i have at home. I replaced the condensed milk with sugar and evaporated milk and ice with cold kefir and filtered coffee with instant coffee powder and cool water. In about 3 minutes, I saved 1 dollar today and the earth from another disposable plastic and the logistics of getting to the coffee shop. More convenience less plastic less consumerism. Nowadays i just make the retail food at home myself without perfectionism in a few minutes and save so much plastic time and money

Unfortunately, the second coffee bag we bought (from the same company) did not taste the same at all, and the smell was awful. Can anyone recommend a great vendor from who you regularly buy this coffee, another great thai coffee? I'm in the states.

Ok 2 questions. 1. could I use the drip system that they use for Vietnamese coffee and 2. could I use the ground for more than a single cup, or is that not recommended? p.s. huge fan, my wife is thai/loas and I've impressed her with many of your recipes :)
@MiguelEnriqueCVeluz7 жыл бұрын
Maybe too late to respond, but I actually use the Vietnamese phin filter to make my Thai coffee. I like the taste to be a bit stronger than regular Thai coffee, so I use it for that reason. I do also reuse the grounds to both improve the filtering properties of the phin filter, and because the grounds tend to have unextracted flavor even after the first brewing. I never reuse grounds more than once though. I throw it out after the second use. Once I start using it for the third time, it contributes a bitter, mineraly flavor that doesn't belong in Thai coffee. Enjoy, my friend!

I really miss Oliang. Like Thai tea, the main point is to have cheap coffee so there is more robusta in the mix and more caffeine (that's why it's so addictive). Using instant coffee and lowering the water ratio don't work. Very bitter, very sweet, high in caffeine.
@Misbehave118 жыл бұрын
Love the recipe! But why evaporated milk? Is that how they make it in the restaurants?
@ashleynamasondhi5457 жыл бұрын
Evaporated milk prevents the drink from being too watered down without losing the creaminess of the milk. I know some restaurants cheat with using half and half (which turns out alright) but definitely don't use regular milk since it'll get watered down quite a bit (especially since you'll have lots of ice to already do that).

What do you think of the other brand of "Thai coffee" powder that uses rice instead of corn? I saw some in both a Vietnamese and a Thai store in Chicago, so I assume *someone* thinks it is authentic, or at least drinkable.
@PailinsKitchen9 жыл бұрын
+eric moss I've never had the one that uses rice actually, would be interested to try.
@ericpmoss9 жыл бұрын
+PailinsKitchen I made some last night. The brand is "C.T.F. Brand", short for Combine Thai Foods Co. LTD. The logo is a white deer on a red background. The ingredients are "Natural Caramel, Roast Coffee Bean, Roast Rice", but I'm not sure if "Natural Caramel" is actually the largest component. Anyway, it tastes good, but lacks the corn that makes Oliang distinctive. So when it's sweetened with condensed milk, it tastes like dark, smoky coffee sweetened with dark sugar rather than what we expect from "Thai Iced Coffee". I'd buy it if Oliang isn't available, but it's not going to satisfy someone wanting what they get in restaurants.

Just use less. Reduce the condensed milk to 1 tbs and the sugar to 1 tsp. And ig the evaporated milk is healthy and adds creaminess so add as much as u want
