About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitchen.com

Wow! "Aloy Tee-Soot!" This looks amazing! As I was growing up, my best friend was (and still is) Thai. His parents own several Thai restaurants and this was always one of my favorite things to order. Pai, you are an engaging, charming and articulate video presenter. You are clearly very skilled at making food, you know the craft inside to outside and all the details both from a western and thai perspective. I just love this channel, it has inspired so many delicious meals for me. And it keeps me sane during my most intense withdrawal symptoms after I have returned to Farangistan from my latest Thaland trip.

My wife makes this for breakfast sometimes. It's also quite low in carbs, which is good as I am on a low carb diet at the moment. Yet also on holiday in Thailand.

I've never made this dish, but I've eating it in Thailand many times. The filling is always piping hot. So I guess you keep it hot in the pan it's cooked in, and then fill the omelet from there in the other pan.

one of my favourite dishes when I am in Thailand, I can't eat tomato, but it's fine without, a little soy sauce at the table gives the moisture needed, plus a little dried chilli :)

+Stephanie C you can use Chicken , shrimp, squid ... whatever you want...I'm a Thai. I prefer to add shrimp when i cook the menu

Soft tender thin omelette can be done by whisking in couple tea spoons of mayo & also adds volume.

Ahhhhhhhh 🙏 Thank you so much We love all you present 🎁 to us. ? We have gas stove. Can we use a wok effectively?? I saw a thing called wokmon is this a good way to increase the 🔥 flame. Or do we need to purchase the burner like you have ?? Thank you

This looks AMAZING. I'll definitely be giving this a shot. So, would it be correct to say there are two flavor trinities: galangal, lemongrass, and kaffir lime leaves, and then garlic, cilantro root, and white peppercorns? I was not aware of the latter. Very interesting!

smooflarkin That is correct :) The "trinity" terminology is just something I use, it's not an official term, but in Thai cuisine I have notived that there are these 2 sets of "trinity" that are used often.

I don't know if Thailand has this kind of dish (though the name of the dish is kinda Thai-ish), but in Malaysia we kinda have similar dish like this called Nasi Goreng Pattaya (Pattaya Fried Rice). Instead of just proteins and veggies, we wrapped a simple chicken fried rice with that omelette much like how this stuffed omelette is and top it off with fried onions, green onions and a drizzle of chilli sauce or ketchup over the omellete fried rice.

+PailinsKitchen It's super tasty! You should try to make it sometime though. But instead of just plain simple chicken fried rice wrapped in omelette, why don't you try to wrap Tom Yum Fried rice with shrimp and squids in the omelette and drizzle sriracha sauce over it. ^^

Karp Kuhn Krap nong Pai. I have eaten this in Rayong and it was 'sep eley' I now know the name so can order when I'm in Thailand. Chock dee karp!

Thank you. I worked as a chef, and I always use butter when I make an omellete. So, oil and an omelette is a big no go .

Did you talk about Thai food? Actually, oil makes the thin omelette smell good. Butter just doesn't go well with this dish.

Well chef there are different versions of omelette around the world. Thai omelette cooked with oil is meant to be robust and crispy unlike Western style soft omelette
