This is Konkani Version of "Akki Rotti". It is very tasty and filling recipe. If you have cooked Rice from last night, then you can use it in this recipe which makes them more crispy and tasty. This dish you can have with ghee or some butter or with chutney pudi. I hope you will like this recipe and try it once and let me know your comments.
Ingredients used:
----------------
1 Cup cooked rice (Left over last night)
1/2 Cup chopped onions (2 big onions)
1/2 Cup Grated coconut
2-3 Green chillies
1 and half cup Rice flour
1 Cup water
1 tea spoon sugar
Salt as per taste
Method of cooking:
-------------------
1) First mash the cooked rice with a spoon or masher or you can use your hands as well.
2) Add chopped onions, finely grated coconut, chopped green chillies, 1 and half cup rice flour, 1 tea spoon sugar, salt as per taste.
3) Add 1 cup water, little by little and mix the ingredients to get proper consistency of the dough.
4) Heat a pan and apply some butter. Now, apply some water to your hands and take a handful of dough and place over the pan.
5) Keep applying some water to your hands and keep spreading the dough on the pan to get a proper "Thalipeeth" shape. You can even use banana leaf or butter paper to spead this before putting on the pan. If you use banana leaf then you can first apply some oil on top of banana leaf and spread this dough on the leaf , and invert it on to the pan. Same procedure can be used with butter paper as well.
6) Apply oil or butter on top and close the lid and cook for 5 minutes.
7) After 5 minutes, open the lid and turn the "thalipeeth" and again apply some oil or butter. Fry for some more time, till it becomes crispy or changes colour. Now "Thalipeeth" / "Tandla Bhakri" / "Rice Bhakri" is ready to be served hot with ghee, or some butter or with chutney power.
