I think the green onions should be put after the sauce since they cook so quickly. In the B-roll you can see they wilted a lot and now very soft. In my opinion, put them after the sauce to keep a little crunch to them

Agree! Spring onion always last. He did the same in the video with the cashew pork. Made it myself and noticed the wilt too lol

It's pretty normal in Chinese cooking to have the same ingredients added in different stages for different flavors and textures. So in this case, cooking the green onion perfumes and flavors the dish, then it's also added in fresh at the end for the crunch you mentioned!

Awesome! You’re right this menu can be really quick. Prepare the veggies, cashews nuts, the sauce, seasoned the chicken, then all you have to do is throw them all in a wok and toss. I personally love having it with a fried egg as well. Yummm 😋

How to cook rice without a rice cooker: 1) Wash rice. Like the dude said. 2) Add washed rice to saucepan or pot. 3) Add 1.5 cups of water for each 1 cup of rice. That's 1.5 cups, not 2 cups. 4) Leaving the pot uncovered, bring the water to a boil. 5) Cover pot and turn heat down to low. 6) Let the pot rest, untouched, for 12 minutes. Do not lift the cover, do not stir the rice. 7) Move the pot off the heat, to another part of the stove. Leave the pot covered. 8) Let the pot rest, untouched, for another 10 minutes. Do not lift the cover, do not stir the rice. 9) After 10 minutes, *now* remove the cover and stir the rice. Done. Do your cashew chicken and serve on top of the rice.

I made this for dinner today and it was delicious! It definitely took me more than 15 minutes but I started the rice first and the meal was done at the same time as the rice. Perfect!! Might make it again this week

I literally just made his "1 Dollar Healthy Rice Bowl" that he posted on Feb 6th and it was pretty damn easy and it was seriously great. It took me awhile only because i did every step individually just not to fuck things up. The only thing i didnt have was the avacado, chives and egg. Still an amazing dish.

Ok Josh, I made this last night as I’m trying to be healthier and cook something my family is actually gonna eat (especially my picky toddler). This was sooooo good!!!! I even went to Ranch Market and got a wok finally. You made me cave in and get the damn wok. I’m not even mad though.

what about a "but healthier" series. as a student I often struggle making cheap, healthy food that tastes good at the same time. more of that pls!

Not josh obv but one struggling person in their 20s to another. Great ways to get cheaper food without sacrificing quality assuming you have an oven and actual cooking amenities. Just buy whole chickens and learn to break them down. One whole chick can make at a minimum 4 meals for you plus a carcass and bones for stock. Asian cooking in general also seems to me to be quite cheap to make. Curry pastes for Indian and Thai curries can be made in bulk and frozen. They also work great for lunches the next day. Also, Chinese and Japanese sauces tend to use similarish ingredients from what I've seen on KZbin. Oyster sauce, fish sauce, light and dark soy, vinegar etc and require basic knowledge of ratios to be able to through together something that passes. The ceiling for those sauces is quite high though so you can make something simple initially then get better and better. Disclaimer: I'm not saying that Chinese and Japanese sauces use the same ingredients there are alot of differences but rather most basic sauces from each country use similar ingredients. When in doubt buy in bulk too. Pick a carb a stick to it. For example I mainly use rice because you have the option to make fried rice with leftovers. I buy the biggest bag I can get in my supermarket (actually going to an Asian supermarket here can actually net cheaper rice sometimes) and only use that. Hope these help!

Believe me, man, I don't want to remember those days of me removing a sheet tray of fully blackened cashews/ walnuts/ croutons either... I still have nightmares about chef hollering at me over a smoking sheet tray lol. Great looking recipe though, looking forward to trying it!

Josh with 2 minutes left: saute green onions for 1 minute, garlic and ginger for 30seconds, peppers and celery for 1-2 minutes, saute chestnuts for 30s-1minute, add sauce and finish for 25s. And finishes this within 2 minutes........

Hello, just came here to say that you make, in my opinion, best cooking videos on youtube. But not only is the cooking good, but these videos are super entertaining. I have been watching way too many of your videos today and I am definitely going to be making some of these things to enjoy on my weekly "cheat" meal. Though to be fair, that was per portion, not for that plate. He had ~1 cup of cooked rice(200 cal,) 4 oz chicken thighs (200 cal) probably about 1/4 cup cashews(150 calories) maybe 50 cals in sauce and 50 cals of veggies and the oil used to sauteed everything. So that bowl was closer to 700 calories. I too count every calorie that goes in my mouth, and I WISH I could eat that much lol.

Great thing about a lot of these recipes is that they can be meal-prepped and made in bulk. Really good and handy for those who don't have much time and are always on the go who don't want to spend money on fast-food. Chicken, boiled veg, some white or brown rice.

"But Faster" is a good one. He could also do a "But Healthier" and make healthier versions of food. Josh is a chef that's in pretty decent shape. I want to know how he eats in his day to day. I can't imagine he's making some fried chicken every day

i mean basically doing that is faster unless its right outside your house. if youre drive is 10-15 mins one way thats 20-30 plus the wait for the food youre looking at 40 mins etc, any video he has already done kind of falls under that

Dear Mr. Weissman, Please start a new series called, under 30-min. EVERYTHING, including the rice, and the preparation of your ingredients, done in less than 30-min. When I was in university I had "it" down... In 30-min; from the time I walked into my apartment to sitting down eating a bowl of Japanese style curry rice! Yes. It can be done and it is up to you to shine the light and show the way.
