I’ve lived in Thailand for 30 years and have tasted this dish in at least 40 different restaurants. This recipe is the best best I’ve tasted. The only change I made was more than double the amount of chili paste. It’s the chili paste/oil that makes the difference between this dish and the bland stuff sold to foreigners in Thailand and overseas, in my opinion. Thanks so much - now I can really enjoy this at home!

I watched the video last week and finally made it tonight. What a PERFECT recipe. I could not get thighs so used breast; your marinade trick with adding water worked beautifully. Also roasted those cashews fully, as directed. Better than takeout for sure! Can’t wait to make more of your recipes!

I made this recipe and took it to our local monastery for a Magha Puja meal offering. Our community is Theravada, Thai Forest tradition, Ajahn Chah lineage. It was very well received. The monks usually don't finish all the dishes offered but they finished this one. Your ideas of roasting the cashews and searing the chicken made this much better than other versions I have made. Love your channel and cook books.

I made your recipe this past Sunday. Wow! Wow! Wow! (My best Mark Wiens' impression.) It turned out to be my best ever Thai dish. I'm teaching myself how to cook Thai dishes using your cookbook. I added three Thai chilies during the garlic/onions step of the cook. And, I roughly broke up the cashews in my mortar in order to have more smaller pieces of the cashew flavor spread in the dish. I have got to do this again very soon. How about tomorrow, ya'll? I can't pronounce the Thai name for this dish, but I sure can whip it up and tear it up. ;)

This is a simple and terrific recipe! I followed it precisely, however, I did go about 10% over on all of the vegetables and thighs. To compensate, I added 1.5 tablespoons of water to the sauce to stretch it out. It came out perfect. I wouldn’t deviate at all from her sauce ingredients. I was able to find them all in an H Mart here in the US. And yes, roast those cashews! It really makes a difference, and use unsalted. I had raw cashews on hand so I had to do it anyway. I highly recommend this dish! 👍👍

Thank you! This came out soooo good when I made it. I can't wait to make it for my spouse who has stated emphatically that she doesn't like Cashew Chicken. I used breast meat but and immediately realized that thighs would have been the *perfect* meat to have used. I didn't have the special sauce you mentioned, so I just added more fish sauce as you had also recommended and it came out great! It had all those complex flavors you always wonder how they achieve in restaurants -- only better!

I use thai green curry paste for seasoning in many American dishes, I serve it on the side because not everyone likes the spice or the herbalness (Guess that's a word). Made this tonight. Was really really good. My only problem is that it ended up more watery than yours. I used chicken thighs. I added a little corn starch slurry and it worked out but not sure where I went wrong… By the way, my first comment on your videos - but I’ve been watching for years and your videos and cookbook are my go to resource. I am a home cook and this used to happen to me as well. But there are two problems with my cooking which was causing this (1) chicken is not cut thin enough. (2) Wok is not hot enough. In order to prevent the chicken from becoming watery you have to sear it quickly and quick searing will come from thin cut and hot wok. If its still not working for you then considering frying (which restaurants do but it leads to waste of oil and unhealthy food at home). Try to cut chicken thin and put it in a hot wok for searing and prevention of watery chicken.

Make sure that the wok is searing hot. If not, the chicken will stew and render it's liquids.

Your best bet is the corn or tapioca starch trick. The starch will act as a binder, and it will also create a layer outside the meat protecting it from overcooking. I have cooked a lot of asian food, and I had the same concerns if I follow the same method in the recipe. Also, consider the material of your wok. The best is to use a light-weight seasoned Chinese cast iron wok, or a good quality carbon steel wok. With a practice, and patiences those woks will build up its natural non stick surface over time.

@@theguynextdoor4978 …..that’s the difference I see in Thai cooking tips that they don’t use corn starch for coating the meat or making the sauce thick. I prefer to put starch to get the soft bite. I read if using chicken breast add a little baking soda to make softer. If you know of a good kung Pao chicken recipe, please let me know.

Nice suggestion on searing the chicken when it is first added to the wok. I was always under the impression that the Asian way was to keep everything moving constantly in the wok to prevent burning. Thank you ! (P.S. Love your HTK cookbook !)

If you use high power stove, you keep everything moving otherwise you burn things. If you use normal stove like Pai did, you oftentime have leave things sit in there to sear, taking minutes instead of seconds in case of the high power one.

Tasted fantastic! I'm suprised how mild the chili paste is. My three year old ate it no problem - by the way a question from a european who wants to introduce his kid to chili: when do Thai parents begin to feed hot food to their kids? I kinda want to begin slowly, but when's the right time? I forgot to roast the peanuts in the oven, so i threw them in the dry wok, worked perfectly.

Hi! Your cashew chicken is one of my very favourite dishes from your cookbook, and therefore favourites dishes ever! This updated recipe is slightly different. Just wondering why you are now searing both sides of the chicken until it is completely cooked? I see you have also omitted mushrooms in this version. I personally really enjoy the texture and flavour from the mushrooms so will continue to add them.

The old thinking was that allowing the chicken to finish cooking in the sauce will give the chicken a chance to mingle with the sauce. But I no longer think it makes much of a difference, and it's better to give the chicken more searing time for max browning and flavour which makes a real difference. And the no-mushroom version is actually the more commonly done way in Thailand, so I wanted to update it and simplify, but stick with the shrooms if you like it! :)

We made the glutenfree version of this dish (used tamari, and glutenfree Kecap manis, gochujang +more sugar), delicious, definitely gonna make it again! Ty Pai! Side note: I fried 2 chillies (not 7-10), one for my partner one for myself, and i tried half of mine, couldn't bear the heat :D , but my partner told me his was spot on.

Saw this video and decided to make it the next day. It was absolutely incredible and we enjoyed it so much we made it again the day after😅! It's on top of our favorites list. Yummmm, so good!!!! The only thing we did was doubling up on the sauce because hey we like sauce 🙂
