Great point, Diana! Even if you have all the ingredients, learning the subs really helps understand the "theory" behind the recipe. This helps us get to the point where we don't even need recipes much faster.

Omg 😱 I just made this and it was Mind Blowingly delicious. The garlic, dry roasted peanuts, red pepper flakes, chinese vinegar - hit those perfect umami notes 🤤. And the scallions & cilantro sent it into the stratosphere. Thank you 🌈🙏🏽.

Careful! If you like umami-unctious complex flavors, you'll find an excuse to use this everywhere. If you like it, try using dark/black soy sauce as well, they play well together 💕

I made these for dinner last night and they were so incredibly delicious. I might have eaten a little too much, I just couldn't resist!! I loved them so much, I brought the leftovers to work with me and ate them chilled! So good!

You have such a talent to make each recipe look so easy! When I am looking for something to cook, I automatically go to your website. I downloaded pretty much all of your recipes, made copies and created a little cookbook for myself. Two days ago I made the creamy avocado gaspacho, it was so refreshing and tasty. Please keep up the recipes coming and add your best critics to some of them (your parents). Thank you Nisha for all your hard work.

Thanks for the recipe! Small tip to save using more gas than necessary (and being a bit more sustainable:)) is putting a lid on your pot while boiling water. A lot of heat disappears if boiling without a lid which then takes longer and more gas

I am nearly 30yo and for the first time in my life I bought a cookbook this week. The Vegan Instant Pot Cook Book is incredible (it has a picture for every single recipe but that's not even the best thing about it)!! The way you introduce all the sauces, spices, ingredients, the Instant Pot settings and whatnot at the beginning of the book spoke to me on a personal level because it felt the way I would write my thesis in layman terms. Seriously, this is how every cookbook should be written in this day and age. BTW I'm not even a vegan, I'm an Indian immigrant living in Toronto and your cook book is an invaluable source of inspiration for me as I try to increase veggie consumption and reduce meat consumption at least on weekdays.

@@RainbowPlantLife That's how we were raised in India. We would eat non-vegetarian only on Sundays while sticking to egg+vegetarian dishes for the rest of the week. Your cookbook is helping me kinda reclaim my roots 😄 (sorry for getting a little philosophical but it's harder to cook vegetarian dishes 5 days a week here in the West🤷🏽‍♂️). Don't ever let anyone say that your cookbook is just for vegans 🙂

yum!! i substitute flax and chia seeds for the sesame seeds, and substituted toasted sesame oil and rice vinegar for the chinese black vinegar and it was delicious :)))

I can totally understand why you love this recipe so much: not without reason Italians love their aglio e olio and this has the same lovely characteristics: salty but sweet, spicy but tangy, packed with umami and so so comforting because of the chewy noodles. Having said that: isn't it just impossible to live without noodle dishes in general? They are simply the best. . Anyways, sending you lots of love! Have a great day or night!

This looks so delicious! Can’t wait to try it. Regarding the tofu, my son LOVES tofu. We’ll dice and cook 2 blocks of tofu at a time and keep it in the fridge so it’s ready at anytime for him to use for tacos, pizza topping, etc. Same could be done for this, depending on how it’s seasoned when cooked. He created a sriracha tofu recipe that would be great in this.

Made this tonight and it is amazing. I did have to leave out the cilantro because I am not a fan. However, I had some sugar snap peas and tossed those in and it was fantastic. Love this recipe! Thank you!

The chili oil look good! And you can put your index finger on the back of the knife for more control. It's makes chopping so much easier.

I make a verrrry similar sauce. 1/4 cup soy sauce with garlic, sugar, sesame oil, chili oil, rice wine vinegar, and canola oil. Ummy yummy for mah tummy! 😋

I just made this dish today and let me just say.. I have "baby mouth". I still ate my entire bowl because it was so good, suffered through the heat and loved every bite. That being said, I will probably use less to none of the chili flakes recommended next time I make this. Best believe there will be a next time 🤤

I noticed that you don’t tend to avoid things as much in your recipes you just have amazing recipes with variety’s of savory healthy ingredients so that if you say we udon noodles you’re not concerned about it. I find that very interesting! 💜🙏🧚🏻

Ok ok….. this recipe has been the one recipe that caught my interest from the first time I watched you make it. However, the ingredients were difficult to obtain. The black vinegar I ordered from google and it took 8 days!!!! The udon noodles are frozen not fresh. I couldn’t find fresh udon noodles anywhere near my house! After obtaining 90% of the other ingredients I am ready! Tonight is the night! Thank you for sharing your recipes, my daughter is vegan and it has been a challenge feeding everyone and making sure we are all fed and happy with our meals. Christmas night, I made Cauliflower soup, salad and homemade nahn bread with delicious olive oil. I don’t know your first name but my name is Leslie and I wanted to thank you for your guidance.
