2 eggplant
half a pepper
1 onion
1 cup tomato passata
2 cloves of garlic
1 tsp sugar
1/4 cup water
3 eggs
30 grams (1 oz) mozzarella for pizza
1. Peel the aubergines (optional) and cut into cubes.
2. Fry the aubergines in a pan until golden brown, salt and pepper.
3. Remove the eggplant from the pan.
4. Cut the onion and pepper, fry in a pan, add tomato puree.
5. Add salt, 1 tsp sugar, chopped garlic.
6. Add 1/4 cup water and simmer for a few minutes.
7. Return eggplant, mix, make wells.
8. Break 1 egg into each well.
9. Simmer under the lid for 5 minutes.
10. Sprinkle with cheese, melt cheese under the lid.

2. Cut into thin strips, without cutting the tail. If the eggplants are large, cut them in half.
3. In cold water, dissolve the salt and soak the aubergines for 15-20 minutes.
4. Mix eggs with starch.
5. Put the breadcrumbs in a plate.
6. Heat the oil in a pan.
7. Remove the eggplants from the water and dry them with a towel.
8. Dip and drizzle the eggplants with the egg mixture.
9. Roll thoroughly in breadcrumbs so all pieces are coated with breadcrumbs.
10. Fry in oil until reddish and crispy.
11. Chop the garlic and mix with yogurt or sour cream.
12. Put on a dish and serve with sauce.
