We just started a small crop of jerusalem artichokes this year for the first time. Regenerative food crops and other practices are important to us here and when I learned about them helping with gut health and the fact that I can feed the stalks and flowers to our goats and chickens. I was glad to hear you mention them here :)

Yay they are great raw aren't they ? I love the crunch but not hard on the jaws and raw hazelnut type of flavour. Not super fan of them pureed BUT in a soup together with witloof or orange squash they are alright ! _ did you know you can slice them and pickle them ?? (Lactofermented salad) It's delicious ! So delicious that i have eaten 5 liters in volume of that salad this winter :-oo _ we make a mix of jerusalem artichoke + sliced carrots or sliced sweet potatoes for the color, + slices of yellow oignon (you might add a tiny bit of horseradish if you like it) + mustard seeds if you are happy to add them. DE LI CI OUS. I eat it as a topping for rice, or with everything ham and melted cheese, as a snack together with cottage cheese and with fish and chip type of white fish ! I loooove it!!

I'm a 57 yr old male, have worked out daily most of my life, Powerliflting, strongman and bodybuilding and have tried every imaginable diet and eating protocol you can think of. Keto was good but something was lacking. Did carnivore for 3-4 month stretches on 3 different occasions with great results but again was not firing on all cylinders but only when I add more fibre (berries, oats, sweet potato, honey etc) is when I feel my optimal in strength, endurance, mental clarity and recovery. My weight is down and leaner than in my 30s. I think some people based on their gut microbes can consume more carbs and live a more healthy life. I get my blood work done every 3 months and I am healthier now than I was in my 30s. Every blood marker is perfectly in the healthy range.

Plantains I used to eat a lot, cooked or fried with refried beans, cheese, and sour cream. I cut back on them and many other foods like legumes when I was diagnosed with prediabetes. Regardless of the benefits, I do not trust foods that taste extremely sweet or are too starchy anymore.

I love fried green plantains but, every time I eat them my blood sugar spikes to 150 to 200. It takes me a day or two for my sugar to level out. Does this mean that I have a sensitivity to plantains.
@DesArtandInk2 жыл бұрын
it is more likely because they are fried. plantains are high in sugar, but its packaged in fruit fiber, so eating them on their own is not a bad thing. but when they are fried, they become saturated with oil. oil in high amounts interferes with insulins ability to take the sugar from your bloodstream and put it in your cells where it belongs. so it gets trapped in your blood, thus the high blood sugar levels that take some time to resolve as your body deals with the oil. try using just a tiny amount of oil instead. This goes for any combination of sugar + oil. eating foods high in both sugar and oil is one of the main pathways leading towards developing type 2 diabetes.

Yes, chlorine kills harmful bacteria in water, so it makes municipal water safe to drink, but drinking it straight from the tap can contribute to killing off bacteria in the gut. You can filter your water or leave it out for 24 hours before drinking to allow chlorine to evaporate out. To filter fluoride, you would need to have a specialized filter.

What about the Masai tribe? They eat primarily meat, milk and blood. Very little fiber. Fiber would only be in large quantities in things like fruit which was only available in season in most places. Our ancestors weren’t chomping on high quantities of vegetables.
@CyrilAndPriscilla Жыл бұрын
That's actually not true. Most of our ancestors WERE chomping on high quantities of plant material. The Masai are a special example that didn't--- and they have most likely evolved to adapt to that . Most ancestral diets were actually very high in fiber and plant material and low--- though not zero--- meat. A modern example would be the Yanomami people in the Amazon. They are one of the last tribes still living as hunter-gatherers, so they approximate our ancestral diets, and the amount of fiber in their diets is dramatically higher than modern diets. They also consume less than 100 mg of sodium per day, whereas in the US that average is about 3500 mg. They do eat some meat and fish, but most of their diet is plantains, cassava and fruit. Google Yanomami Johns Hopkins to read the details of the study on the Yanomami's diet.

I always back off a little when comparisons are made between our "early ancestors, hunter/gatherers" and us today. That's a LOT of time, with lots of processed food in between. Humans were cooking, mashing, spicing, grinding and adding preservatives to food for thousands of years before we did. i think we have had plenty of time to adapt and adjust. Not to mention the difference between foods "back then" and what was needed to digest them.
@curiouscat33842 жыл бұрын
There's another layer of difference between us and our ancestors and that is CHEMICALS and monocropping. Never mind how to prepare the food, What we get now is tainted and stripped of nutrition before it even gets to the store or the kitchen. Even just since the 90's when herbicides like glyphosate were introduced, the epidemic of gut diseases has skyrocketed. Check out analyst Dr. Stephanie Seneff or Dr. Zach Bush for more info on that.
