it is one of the more expensive ones in NYC. It was the most expensive dinner i've ever had (and i've had a few 3 star dinners). but yes, i get your point on a per course basis.

Since being a supertaster/taste ability in general is only weakly correlated with wealth, you more so get a bunch of status signaling ingredients instead of unique and subtle flavours, though there is still some of the latter for sure

The snacks are only one or two bites, but most of the courses there are relatively substantial for a tasting menu. It’s definitely filling.

Black truffles are the cheapest ones. White Alba truffles are the ones you want. Also, caviar has to be Iranian in order to be good and expensive. Be careful with the tuna too because the one you want is the Pacific bluefin whoch is caught in the waters surrounding Japan, they can sell you Atlantic bluefin which is also...cheaper. Lastly, wagyu beef has to be from a specific type of cow from the Kobe region in Japan or else it can also be a cheaper variety. Be careful with "expensive" dishes, they can sell you the cheap counterparts pretty easily for a premium price.

Very cool information. Thanks for sharing. Though other than the truffle example, I'm not sure how you could actually tell if you're getting cheaper ingredients. Its not like every fancy restaurant is sharing their supplier.

@@dAWwr906 Well, once you have tried the real thing, you can easily tell apart the fake from the real stuff. Also, you can just ask before paying. "What caviar is this?" "What subspecies of bluefin tuna is it?" etc. If they don't know or/and don't immediately say "Oh, it's pacific bluefin" or "that's Iranian caviar" etc, turn around, they have the cheaper variety.

For example, if they serve you black truffle, it's because they fit the dish better, not because they're too cheap for white ones.

@Ethertask Sebastian I don’t think you’ve ever been to a Michelin restaurant… the small portions are so that people can enjoy multiple courses without getting too full early on. Once you finish a 12+ course I guarantee you that you’re filled. Please be respectful towards the world of gastronomy and the chefs that dedicate a huge amount of time to mastering their craft.

@Ethertask Sebastian yeah this just shows that you’re ignorant… I’ve been to places like these dozens of times and they’re quite filling after you’ve finished the whole course. It’s just an amazing experience, basically edible art. I understand that you might not be as financially stable as people like me but I do wish you could be more open-minded towards WHY some might choose to spend a decent chunk of money for culinary art. Once you experience it, it’s really something special. But until then I’ll ask you to refrain from talking down on the chefs and their clients.

Have a chronically underdeveloped palette which is used to bland food or 2. Think because it’s expensive and not a disgustingly enormous portion that it’s a total scam. You just need more perspective, for those who have the money it can absolutely be worth it

You always say you ask for another one when at these Michelin star tasting menu restaurants, I didn't even know you could do that! Do they charge yoy extra for giving you a second of a specific dish? How does that work?

I have never tried, but I think it would be quite rare that you could actually get served seconds. These restaurants are serving such limited supply, high-value, and sometimes rare ingredient dishes that they only plan for the number of guests that they have in house on any given night.

Actually, if I recall correctly, you can order double uni for an up charge there (the truffles cost extra too). You generally can’t get a second round at these restaurants though

@@Rockyall, True, if you’re really into the experience and are friendly and inquisitive, you will sometimes get an extra dish or dessert or wine. This has happened to me a few times, especially towards the end of the night, but I’ve never tried to pay for an extra of a course on a set menu.

Had it once with my wife. Tbh was very ok. Uni was great but other than that, everything tastes meh. Not to mention the staff was quite rude. Not worth the money considering there are other places like these around the city

Your basing it on each dish itself instead of the overall dinning experience itself. They can't make every dish big because you get a tasting menu of the whole menu. Which consists of like 14 different dishes. So it's actually a lot

12 courses of 2-5 spoonfuls each of premium ingredients and good food in general for $500 is a decent deal if you're trying to knock-off a bunch of foods off your bucket list. Better than spending upwards of a grand for some mid steaks at salt bar's place

What's so odd is that it is so expensive but it really doesn't seem worth it, or like they even tried that successfully to make it worth it. You get tiny portions, so that's not luxurious, that's not the peak of what it could be. So what about aesthetics? The courses don't actually look that aesthetically pleasing compared to what they could be, care was taken in their assortment but it lacked an eye for beauty, it's orderly and sometimes pretty but it's not as good as it could be. The only thing that might be individually worth its cost is the taste, but that probably doesn't make it worth the time and money expended. You'd think one of the best in the world, made to be an experience and not just a meal, would have put more graceful work into the aesthetics and experience.

From my experience, a three star will cost you a minimum of $400 with tip (no aperitif, no wine, no digestif) and I put the higher end at $700 (or maybe $800 even the more I think about it) that would include wine pairing (probably mid-tier if there are multiple) with aperitif, digestif, and tip so right around what you are suggesting for Osteria Francescana if you go all in.

I would also add to be fair to the original comment, I have been to three stars in Asia that are less costly (at least in Hong Kong and Macau). Also, while there is no Michelin Guide for Latin America, there are very good value World’s 50 Best restaurants that you can go to for $100-250 per person (with wine pairings or bottles in Argentina and Chile that are significantly less than other countries since you don’t have to pay the import taxes for excellent domestic wines).

Bruh its been garbage since it's inception. The only reason it was created was to convince french people to drive as far as possible so that they would have to buy more tires. Even from day 1 they've just been making shit up so people will spend more of their money.

@@adamp7069, I’m not sure what you mean- I didn’t think the plating was “off the wall” at all (at least I don’t remember anything that unusual and I last ate there about 6 months ago). I thought the platings at Alinea were way more off the wall. What did you have that you thought was that strange?

I think it’s more likely 17/18 bites since the meats will take 2 bites. Try to calculate how many bites it takes to fill you up at dinner or launch and compare if 14 small portions curses are enough or not
