I have the utmost respect for such waiters where they remember each component of each dish and recommend the best way to have a certain dish. I know its what all top notch restaurants drill into their waiters but I'm still amazed at how much Info they can compress and remember. I can't even remember what happened last week in my life

Everything looks delicious but I gotta say, foams have to be the most overused texture in fine dining. Yes, it tastes brilliant and it's a cool change of texture in an appetizer here and there, but having almost every course topped by some formless lump just isn't very nice if you ask me. What's the good reason to have the Ravioli topped with foam instead of mushroom sauce?

Foams are normally used for texture and intensity. And it isn't as straightforward as you say it is. As 75% of your taste is decided by your nose, it does make a big difference for the overall experience 😉.

@@bart5292 Why is that? I never noticed a more intensive smell in a foam than in a sauce, in fact, the opposite. I'm not saying foams are bad, I'm saying they're overused and I definitely wouldn't want to have them replacing sauces as the primary flavoring as is the case here. In my opinion, they're visually unappealing and don't offer the rich and concentrated experience that a sauce does. They're great for salads and some pasta dishes and overall as an additional texture that can be used in a meal, but I just don't think they should be used this much.

The most impressive thing in this, was the host. I assume there were other tasting courses and memorizing all of it along with the excellent service displayed is something one should be very prideful of. I also wish my local Denny's waiter knew what was in the omelets to this degree.

I enjoyed a few things about this video. First, I appreciate the fact that the video is short yet densely packed with visuals and information. Having a view of the restaurant's interior space, even including the kitchen, is also a plus. (Some Michelin visit vlogs do not show the restaurant's environment.) Similarly, glimpses of the staff and, most of all, the clientele, puts vlogs like this one high ranked. (Again, some vlogs do not show staff and clientele.) Loved it.

I've eaten at Lasarte in Barcelona. It's extraordinary. The tasting menu was like nothing I've ever had. If you get the chance to eat here, I recommend it highly. We had this server and he was professional and knowledgable. She surprised me with reservations to Larsarte on our honeymoon and it was the most amazing culinary experience of our lives.

The ingredients do cost a significant amount of money, developing the courses costs a a lot of time and money for testing, and having some of the best chefs in the world cook for you will obviously be expensive.

Leaving for Spain and Portugal in under a week; can't wait to go back! We've reservations at a Michelin-starred restaurant in San Sebastian and look forward to eating and drinking our way through San Sebastian, Lisbon, Madrid and Barcelona. Then on to Munich for Weiß-bier und Weißwürste and then Scandinavia for smørebrød and gravad lax! This video makes my cabin-fever worse, but the solution is near at hand! Going home and eating well; awesome! Good meals and good drink; some wines, beers and single malts I've had for instance, really add to the quality of life. I can't always remember what I did on holidays or work-trips, but I can remember a pint of beer I had somewhere on tour in England with a buddy, or a meal I had in Cornwall decades ago! Quality of life.. The meal in this video is easily in the $250-450 range. per person. If not more.

What is the protocol for customers with food allergies. I've always been apprehensive to eat at restaurants with fixed or changing menus due to my allergies of all nuts, and most shellfish.

Catalonians speak a different dialect that sounds very similar to french, so they dont have a typical spanish accent as one would expect.
