Frank Pinello is back in Texas with another episode of A Frank Experience. This time, he’s in Lexington, TX and is learning what it takes to make world-class barbecue for the masses at the legendary Snow’s BBQ.
Famous for their dry rub and onion-based mop, Snow’s specializes in barbecue brisket, but also makes world-famous ribs, jalapeño cheddar sausage links, chicken and pork steak. Frank works the pit all night, trying to keep up with 84 year-old pit master Tootsie Tomanetz, who’s been making barbecued meats for the people of Lexington for over 50 years. After mopping the meat, Frank tries his hand working the counter (and an electric carving knife) with the Snow’s staff to serve the lengthy line of customers who start queuing up at 8am for proper Texas BBQ.

That’s literally what I tell cooks when they are training on a grill station. It’s a sensory thing, developing instinct. It’s never always the same. You have to focus on each detail. That’s why grilling and barbecue is so hard to do right in a restaurant.

I went to Snows in 2008, just after they had been named Best bbq in America by Texas Monthly. I pulled up at 9:00am and I got the last of the brisket, some turkey, ribs and sausage. It was all incredible - especially with their house made bbq sauce. I sat around and talked to Miss Tootsie for about an hour, she was amazed that I was trying to eat at every good bbq place in the two weeks I was in TX for work. She had never been to any of the famous spots and asked me questions about what they were like compared to her bbq. That’s how boss this lady is. I’ll never forget that time I spent with her, just like Frankie I really appreciated meeting her and learning about her craft.

Also met Clay and of course i took a picture with him too, he's a great, friendly and hard working guy, hope to meet Tootsie and Clay again this summer, if the travel ban gets lifted for European travelers to the US. Absolutely love people like this. It's not work, it's about doing it because you have a love in your heart. So many people hardly want to wake up because corporations turn this life into a job. I'll certainly share this video with all my friends and family on FB, keep on going... When you put your heart into what your doing, it's no longer a job, but a passion that everyone can taste when it reaches the dinner tables, and this is the love you will not find in the tiny portions of virus sprayed meats found in the local grocery stores.
