I’ve hated on spam most my life mainly due to the texture. Just seemed strange. But finally gave in and got a can the other day after seeing some vintage pics of families eating it. Cut it extra thin and fried it extra crispy almost like bacon to help get rid of that spam texture I wasn’t too sure about. Put it on toast with a fried egg. Oh man it was really good. Salt was a little much but wasn’t too bad.

I learned a new wonderful way to enjoy SPAM from Eden’s Garden in Surigao City. Cut the Spam into the shape of French Fries. Dry the pieces carefully. Heat some oil to high heat. Doing just one piece at time, dip the piece into dry corn starch and put it immediately into the hot oil for a short time. Remove from the oil and drain on a paper towel. Repeat until you have enough. The restaurant served spam fries that were coated with cornstarch mixed with egg. It was a thicker coating than the first procedure. Strikingly yummy.
