My Wife and daughter went to Italy and of course they had Aperol spritzers while they were there. But they didn't think the spritzers were all that great. So I had a bottle of Aperol to use in some other way. I mIxed up your Aperol Sour suggestion tonight to go with our home made pizza. Yay! I'm a hero again for tonight! Not sure how egg white could possibly 'optional.'

I love bitters like this so this looks very interesting for taste. But as a cocktail.. isn't it heavier on sugar than alcohol basically? I suppose that's ideal for some drinkers.. But Aperol as a base?

Aperol is a bitter product, sugar is often used to bring it into "alignment" so you're not just drinking a bitter bomb. Sorta like why one would add sugar to lime when making a limeade, because drinking pure lime is quite awful :) So, the drink cuts back on the overall use of simple syrup. However, it's still got a good deal of sugar that you won't "taste" that is offset by the bitterness. But, I mean... people drink Dark 'n Stormy cocktails which is basically a couple ounces of dark rum against a boat load of sugar as ginger beer is very high in sugar content.

Doubtful, I'm a big fan of transitionary drinks. You've had a vesper, whiskey sour, and you're looking to transition to perhaps an Aviation but you just need something light for a bit to help wear down the buzz from the other drinks, change up to an Aperol Sour. Because, you see, sometimes drinking fun flavorful drinks is actually more important than seeing if you can get wasted on a couple strong ones :)
