...how could water possibly survive the heat of entry & impact? Just on a basic scratch & sniff level, it doesn't make sense.

Many comets and some asteroids contain significant amounts of water in the form of ice. The icy interiors of these bodies are insulated by a layer of rock or dust, which can help protect the water from the intense heat generated during entry. The outer layers may vaporize or melt, but the inner ice could remain intact.
