Proof Bread is a modern throwback to a way of life that values small-scale craftsmanship, local community, and creativity.
We are a team of passionate bakers working in a historic building in downtown Mesa that has been converted into a retail bakery.
Everything we bake is long-fermented with our sourdough starter ‘Harriet’. Each product is artisan, crafted by hand, from the best local ingredients, with no shortcuts.
We bake in line with 13,000 years of human history, avoiding artificial processes and unnecessary ingredients. Honoring tradition and serving better bread for our community.

Hard working chicas 💪 I’m the mixer in a small bakery (we make about 4,000-5,000lbs of food a day) and am very fortunate and grateful to be surrounded and out numbered by dedicated hard working women (9 girls 3 guys). We don’t make bread but I like to show my appreciation by making everyone a loaf to take home now and again

Howdy again from YUMA!!! How can we get some PROOF bread all the way over here, without me having to go to central AZ to get some? and, by the way... seriously some of the BEST food from ANYWHERE I've ever eaten... I am not even sure its legal to have food this good! The breads, the croissants, the sweets... all from Harriett, all so stinking good. Thank you for following your passions and for sharing them with AZ and beyond on youtube. You have no idea how powerful some ideas are, and the kind of future you generate by following them and sharing. THANK YOU!!!

Do people actually buy all of the bread in one day ?

That’s the goal, we bake what we sell, and we bake fresh daily. However, we also bake for markets from this bakery so you are seeing a bake off that exceeds this locations sales.

Why did you put the croissant in water?

This is actually simple syrup in preparation of a twice baked croissant. It is a method of caramelizing a croissant through a second bake which allows for a unique sweet treat and a second sales day. This is a traditional method for many pastries around the world.

The cinammon rolls got downgraded from the last cinammon roll video they made where they added more frosting and were really trying to make it unique

I think you may have the product confused. We make cinnamon rolls as specials from time to time, and yes we frost the tops. The product in the video is our morning bun, and it is special in a different way. This one is on our sourdough croissant dough. It is light, flaky, and balanced with the nuance from the sourdough. This is an everyday treat, whereas the cinnamon rolls are more like cake and should be reserved for special occasions.

Maybe somebody out there will get a bill going instead of when you sell farmland to developers you have to pay 5 years back taxes make it 20 years back taxes hopefully that will slow them down for a while. are we smart enough to do that

I don't know how to say this without being mean, I'm sure all these things are freaking delicious, but don't you think the appearance could improve? Or is that the idea to be more of an "artisan" type of bakery

Rest assured, it is freaking delicious!!! What appearance are you talking about? I can tell you that when you get to go to their shop, it is very refined and beautiful... but more importantly, the taste of absolutely everything I have ever tried at Proof, is on another level of perfection that I can appreciate. I've lived in Italy for over 5 years, and I can tell you that the baked goods coming out of Proof are on par, if not leagues better, than anything I've experienced here in the States, or overseas. In Italy, I would purchase fresh baked bread daily on my way home and for lunch many days, and it was amazing... Proof is doing it right and they have VERY LITTLE to anything to "improve" as far as appearance, taste, or locations. I would LOVE to open one of these bakeries in my hometown, and if the opportunity ever came up, I would seriously consider it.

Hahahahaha it really sucks that we're allowing farmland to be sold for housing I'm sure there's more suitable land for housing then that farm land that took generations to develop
