In quick service (fast food) that's called 'running the post', you are the one point of contact between the frontline/drive thru, and the kitchen, and usually you're the one receiving/stacking/prioritizing/packaging orders and handing them off to the customer or staff delivering them. Usually that was ran by the shift manager, and yes doing it wrong will absolutely sink everything. Doing it right and things are quick and easy, you're planning ahead, you have timers running on things, it's how I can tell if a restaurant is being ran well or not.

This season deserves SOOOOO many awards. Between the cinematography, lighting, framing and shots, to the acting of Jamie Lee Curtis (Donna Berzatto) in the FISHES episode and Ebon Moss-Bachrach (Richie) in this episode, the season deserves more praise.

I think this episode resonated with a lot of people because we've all felt like Richie. Not thriving, barely surviving. Just existing and watching the trains go by. Somewhere along the way we lost our light. So to see Richie start to live up to his potential, and believe in himself as much those around him believe in him is what's so satisfying. All while still being his normal goofy self. "I wear suits now, they make me feel better about myself." And that's what it's all about.

i love this ep.. this brings back memories when i was at my worst times of my life, homeless, no money, no car, no phone, no support, no hope.. i always wanted to be a chef growing up, used to pass this restaurant, until i got the guts to walk in for a job.. i sat down with the exc chef and told him i nvr went to school, i don't have no kitchen experience, i cant cook for shit.. but what i do have is the last bit of fight in me to make this count and will do whatever it takes.. chef put me to the test, washed dishes, scrubbed every inch of the kitchen, chucked hundreds of oysters, cleaned fishes, killed lobsters, cleaned the walk in, waking up at 5am and leaving at 1am almost everyday for 3yrs.. chef comes in one day with a brand new crisp white chef coat.. i almost cried.. fast forward, traveled the states cooking and still learning from great chefs and doing what i love.. every minute counts fam, let it rip

It's so interesting how they immediately set Richie up to be the villain in season 1. And you slowly realize that he isn't a bad guy, he's never been a bad guy. He's clinging to the last thing he has left of his best friend and he's dealing with the stress of feeling like he has to hold the Berzatto family together now that Mikey is gone

My favorite episode so far. There is such a Zen quality to having Ritchie polish forks. Watching Ritchie's heart break when his ex told him she was remarried was brilliant. The order and discipline f the staff is not lost on Richie, and that is going to be a huge plus for The Bear.

This position is called Expo, and it is short for food expeditor. the person that checks food, and sets timings so everything comes out on time, together. Ever go to a restaurant and someone in the group has cold fries? - They have a bad expo.

Ive worked in kitchens almosy my whole life. This episode hit me on such a spiritual level. My motto is everyone leaves with a smile. And god, watching the excitement of Richie as he connects the dots and runs for the pizza, the sheer pride and joy he feels with his accomplishment. I remember how tough it was getting used to kitchen etiquette and the harsh language. This scene makes me tear up, and the first time i watched it... I cried like a baby, it reminded me of the fight i had to have to be a part of the kitchen and how i felt when i seen my first guest smile and thank me personally. This episode spoke volumes and i love this show.

Some fun facts: the restaurant is mainly based on Eleven Madison Park in NYC. Daniel Humm and Will Guidara took it over in 2012, they were the best restaurant in the world, and the pizza is based on their hot dog story. The hot dog story is Will overheard a table talk about how they ate at the best restaurants in NYC but didn’t have a NYC hot dog and so he ran to a hot dog cart and convinced Daniel Humm to put it out. A couple other things: “Every Second Counts” is based on Thomas Keller’s (The French Laundry/Per Se, also consultant for Ratatouille) famous phrase “Move With a Sense of Urgency” hung on signs under the wall clocks The smudge is a reference to food smudge on a plate. This is a “stage,” or “internship”

I liked this episode and felt it was well timed because the family episode was crazy stressful and a lot to process. I also think the episode works because it not only educates Richie about fine dining which will help him fit in better with the restaurant they are developing, but it also educates viewers who may not be aware of what that level of dining involves especially behind the scenes.

We get so much Ritchie here. What I love is the lift of Tangerine Dream's Diamond Diary from Michael Mann's Thief, a film about a consummate professional working in Chicago, which Ritchie probably loves. That cue suddenly raised the bar for him and his discovery of excellence. This show is utterly next level.

We actually get to know already how/when things go down for Richie. Remember at the childrens birthday catering when cicero asked him why he wasn't doing the job he gave him. And when it turned out cicero gave the clients mike's number so Richie never even got any calls or messages from clients.

olivia colman gave the most impressive guest performance in this show so far to me, i’m obsessed with jamie lee curtis’ role and she was great in fishes but colman had to be calm, collected, and a bit muted while still having the last (and most important) conversation to push richie’s character development forward. fishes is still better though 🤭

Fishes is a traumatizing episode. It’s amazingly written but as someone who basically had every family function ruined by someone’s “ego/ bravado” fuck that episode too. Forks is the best for the fact that someone whose been in chaos his entire life finds purpose in order and showing people “yes I can do it, let me show you” it’s the best uplifting thing because he’s breaking free of the chaos and choosing to be a man of his own accord.

They definitely didn't. It was Richie realizing this moment of good, feeling confident, wasn't going to last. He was leaving and going back to that same shitty life he had before he left. So he regressed, his intrusive thoughts took over, and his self-worth plummeted. It is all too realistic.

Such a great episode. This was the episode that made me realize Richie is this show's version of Jesse Pinkman. He's kind of a dirtbag and rough around the edges but you start to realize he's really the heart of the series.

One of the best episodes so far, imo. Richy has to see that he has worth, too. That everybody in the kitchen matters. Without the chef, it falls apart. Without the dishwasher, it falls apart. Without the guy who just polishes forks? It falls apart. That he matters. But then his self-sabotaging/self-esteem kicks in. He's only there as punishment... Carmie just needed Richy out of the way... I thought I was doing a good job but they don't want me... So on and so forth. All sorta stemming from his ideas about Carmie and his perceived worth in "Mr Hotshot's eyes," mixed with his ex he was clearly still trying to foster a relationship with and that general sense of rejection or "they don't want/need me." Especially when he keeps getting these emotional Ws that lift him up and he's the first one in line to cut himself down. Hopefully he takes this energy into The Bear and understands his cousin _wants_ him there. That he sent him up there to learn, not to be pushed aside or punished. That he brings as much value to the restaurant as any other member of the team. Because he is clearly looking for that purpose he was feeling this episode and immediately wanted to latch on. I just hope he isn't a stranger. Got some vibes from the restaurant experience woman.
