Love to hear from someone that actually works within this environment! I know it can be super stressful but you guys make magic in those type of kitchens/environments.

This is what they (or just Sydney) may have asked for, but I don't think that's why Carmy is doing all this. I think he's using this as an excuse to avoid dealing with his issue with Claire and his own anxiety or mental health issues. Also, I think he should have gradually changed how the restaurant works. How can you go from a place like The Beef to a wanna be 3-star spot? Maybe he should have kept the menu the same for one week, then changed it up, or one month, then change it before taking the step to change it everyday, especially without consulting Sydney about any menu changes.

AND... Carmy is starting to act like the butthole NY chef that gave him so much anxiety... he didn't like it, but yet he's starting to act somewhat like him (stress inducing).

I (Sheim) can agree with you on some things like it’s not all because Sydney and the crew want this star, it has some to do with the Claire situation and keeping his mind busy. But they do want this star like stated before and in order to get that drastic changes needed to be made. I’m not saying the menu you thing is needed but there has to be a certain standard at which the kitchen/staff is operating in to be able to even get the opportunity to be considered for that accolade. Carmy as a leader and experienced chef listened to his crew’s wishes in started putting this in place not everything is right in my eyes that he implemented but he is the one who knows how those kitchens work.

The problem is everyone sees and knows carmy is not okay but they ignore it and it PISSES ME OFF
