THE BEST BANANA BREAD is ACTUALLY a MUFFIN RECIPE!! Rosalie - Mom of 8 Kids

INGREDIENTS:
1/2 cup unsalted butter, (8 Tbsp), softened
2/3 cup granulated sugar
2 large eggs, room temp, lightly beaten
3 bananas, very ripe, coarsely mashed with a fork
1 tsp vanilla extract
1 1/2 cups all-purpose flour, measured correctly
1 tsp baking soda
1/2 tsp salt
1 cup semisweet chocolate chips, divided
INSTRUCTIONS:
1. Preheat oven to 350˚ F and line a 12-count muffin tin with paper liners.
2. In a mixing bowl, cream together 8 Tbsp softened butter with 2/3 cup sugar. Add 2 lightly beaten eggs.
3. Add 3 mashed bananas and 1 tsp vanilla extract and mix until blended.
4. In a separate bowl, whisk together dry ingredients: 1 1/2 cups flour, 1 tsp baking soda and 1/2 tsp salt. Mix the dry ingredients into wet ingredients until incorporated.
5. Fold in 3/4 cup chocolate chips. Divide batter evenly into your 12-count muffin tin and sprinkle the remaining 1/4 cup chocolate chips evenly over the tops. Bake at 350˚F on the center rack for 25-30 minutes or until the top is golden and a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes then transfer to a baking rack to cool to room temperature.

Rosalie, You look like you are doing well. Your girls are so adorable. Please continue to enjoy your girls. My 2 girls and 1 son are grown. It went way too fast. Since your husband has passed. Four suggestions I will make. Buy each of your children a notebook, incorporate into your home to journal - including you. People who journal are 30% less likely to be mentally ill. Even your young ones could "write" in their journal everyday. Take your children to a store with stuffed animals. Michael's here has cute and reasonable stuffed animals. Tell them to pick out a stuffed animal, when they miss Dad, they can love, hug and hold their stuffed animal. My 3rd suggestion, when one of your children is upset, have them envision a balloon in their favorite color, have them blow into the balloon 10 seconds. They can continue until their calm. Last suggestion, have them paint, color, make crafts and art projects has much as possible. Doing anything artistic is also a benefit to their mental health. You are doing a fantastic job. I loved your boys creative masks at the end. One last thing, having a punching bag is good therapy too. Praying for you and your children!! 😊

Wow! They've done this before and are good at it!! Rosalie, thanks for the idea for some summer fun!! Empress was having a blast picking names and Passion has this down like a pro!
