Ollie is actually correct about his comment about hotel bacon. I've worked in many hotels and restaurants and he is right. If you think about it. Hotels especially have to cater to so mang breakfast requests, that it is in the chef's blood, along with all breakfast foods in general.

I ate at Hundred Burgers in 2020, when i lived in valencia for 6 months. Back than it was just one of many burger joints in town. But for me it was the best burger i've eaten. since than i never found a burger that quite reached that level, the flavour of the meat was something special. Now 4 years later i stumble upon this video and everything makes sense. I literally ate the best burger.

I live 500 meters from the original Hundred restaurant, and I can't tell, they serve all their burgers with that aspect. It is not just propaganda for youtubers. They do all the burgers to perfection. And yes.... they have the best burgers you can imagine. PS: My favourite one btw is the "Satisfaction".

I love watching their faces when they enjoy things, because they are such a study in contrasts. Josh has high speed internet; the taste immediately races to his pleasure center and lights it up like fairy lights on a Christmas tree. Ollie is like an old fashioned chunky adding machine, where you have to push buttons, pull the lever, push more buttons, pull the lever again, then push the big red button to calculate the answer

As an American who loves a good burger, my hat is off to Valencia, Spain and the proprietors of this establishment. The best burger I've had was from a place called "Slater's 50/50 Burger" in San Diego, California. Imagine a patty made with 50% ground chuck and 50% ground bacon. Amazing.

They look so much like a burger I used to get in San Diego, CA. It was a funky joint that had an old restaurant in it, then a pool hall in the next room with a back room full of pinball games. To top it off upstairs had a cocktail lounge large enough for Cheech and Chong to perform on occasion. There burgers were 1/3 meat with a big fluffy bun. That was 50 years ago. Yum I still dream of them.

It was like a three story large white house that had been converted into an entertainment place. When you walk in... the restaurant was on the left and stairs in front of you going upstairs to the lounge. The restaurant was dark and old furnishings. The pool hall and game room kind of wrapped around it. The bar was behind the restaurant.

Ok, please let me dispel rumors about “undercooked” meat. First, this is false. 160 degrees is almost instant pasteurization (7 seconds). If low temp such as 140 degrees is held for 10 mins or longer it can be pasteurized. 145 is only 4 mins and 150 is about 2 mins and it only gets shorter from there. 165 is basically for an immediate instant read. Sous Vide is another example of pasteurization. Cooking a piece of poultry at low temperatures for an extended period in a sous vide heated water bath can pasteurize poultry or beef. Second, bacteria is on the outside of cuts of meat. Even the freshest ground steak will integrate bacteria. You must pasteurize the steak prior to grinding or pasteurize the burgers.

I've heard of some places that mechanically tenderize steaks by punching little holes. But they might not tell the customer and theoretically it could lead to contamination from the surface if it's undercooked.

@@ypw510 this is true, but it should still be ok if you pasteurize the whole steak. Meathead from amazingribs has a good video about boiling a steak for 10 seconds prior to grinding the meat to make med rare burgers. He’s pretty good. You should check it out. I personally smoke burgers for low and slow for an hour and a half and it pasteurizes them as well.

Every time I get a juicy burger like this, the bun just disintegrates into slop. But the buns these guys make seem indestructible. 1.5 years of bun research well spent

I work as a chef professionally, culinary school etc. My wife and daughter get so mad at me when we take vacation, I look at where we can eat, why they look at sights and shopping. Somehow it works out.😊
