Donair (Canadian east-coast specialty) Donair Meat: 2 pounds medium ground beef 3 cloves minced garlic ½ cup all-purpose flour 4 tsp sweet paprika 3 tsp dried oregano 2 tsp salt 2 tsp onion powder 1 tsp pepper ¾ tsp cayenne pepper Sweet garlic sauce: 1 can sweetened condensed milk 3/4 tsp garlic powder 1/4 cup white vinegar Additional ingredients: Pita bread (warmed) Finely diced white onion Diced tomato For the meat, mix all spices together and, using your hands, blend with the ground beef and minced garlic. Form into a loaf pan (like you would meatloaf) and cook at 300 degrees for about 2 hours. Cool. Slice thin and heat on the flat-top when ready to eat. To make the sweet garlic sauce, mix all ingredients until thickened. Easiest way is to add everything into a jar, close the lid, and shake until it forms a thick sauce. Wrap the hot, sliced beef in the warm pita. Top with the finely diced white onion, diced tomato and the sweet garlic sauce.

Have you ever tried donair pizza? Use a roux to thicken the sauce to your desired consistency (I like it fairly thick, regular donair sauce is pretty runny when hot). Sweat the onions and tomatoes first in a pan to get rid of most of their moisture. Don't cook them too much, you just want to get rid of the water but keep as much "freshness" as you can. I go just beef, but if you feel like splurging mix in some lamb and pork mince too. You will obviously have to adjust the amounts to fit a pizza. Give a try, it's one of my favorite pizzas. I told Sam to try it once but he hasn't yet, that I know of.

@@CHUKDEPHATTE No. Canadian creation is donair. It was from immigrants who were in eastern Canada and did the best with what they had to come up with a taste of home. It is donair, though, not doner. I believe they are two distinctly different things.

You are so right, brine, brine ,brine. Much better on ANY grill after you brine your chicken or thick cut pork chops. I smoke brined bone-in/skin on split chicken breasts with cilantro lime and it's fantastic. Gotta try this one too. Looks beautiful.

I have made numerous of your recipes, and i will definitely make this. I make a cajun injected spatchcock chicken that is amazing. Where i fail as a novice cook is sides. Figuring out what pairs well with each protein. Maybe do a couple of episodes of sides and how to match sides to what the main course is. Thanks for all the amazing recipes

I honestly had a chicken in my fridge thawing when I saw this video and made this as soon as it was ready to go on the smoker. 11/10! Used the leftover chicken and (non-contaminated) marinade to make chicken salad for lunch the next day!

I smoked spachcock chicken in my Weber kettle for thanksgiving and it's now my favorite way to cook chicken. The skin comes out crispy and the meat comes out juicy. And the hickory charcoal smoke flavor is incredible.

Agreed, but I normally do a turkey and in the Weber Smokey Mountain smoker. Hickory/Cherry/Apple are all so good! Wet brine overnight, then quick rinse/spatchcock, pat dry and onto the smoker!

@@morschgaming yeah the thanksgiving before I smoked a turkey in the kettle since it was a big thanksgiving. I covered it with Tony's seasoning and injected it with Tony's injectable marinade and it came out so good. I really want to get a smokey mountain once I save up enough but for now the kettle does a great job

As a request for a video series, I’d love to see how Sam would reheat and re(eat) various sit down restaurant take home bags. I did chicken legs and pork chops on my new smoker last week. The chicken was wet brined and smoked at 250 to 160 degrees. Juiciest chicken I have ever had. Skin was crisp as can be.
