This is absolutely the best coconut pie I have ever eaten. It's from scratch but no standing over the stove stirring while your custard thickens! You will love this easy and simple but delicious pie. DO NOT USE DEEP DISH PIE CRUSTS, THIS IS AN OLD RECIPE AND THERE ISN'T ENOUGH CUSTARD TO FILL DEEP DISH.
Preheat oven to 350
4 large eggs
1 (3.5oz) bag of flaked sweetened coconut
1 (12 oz) can of evaporated milk
1 cup sugar (you can add as much as 1 & 1/2 cups sugar if you like it sweeter.
2 tsp. cornstarch
1/2 cup butter melted, do not substitute (1 stick of butter equals 1/2 cup)
1 tsp. vanilla extract
1/2 tsp. lemon extract
2 unbaked 8 inch pie shells - do NOT use deep dish OR a 9" pie shell, this is a very old recipe and it will not make enough custard for either one.
Blend the eggs, sugar and cornstarch in a medium bowl. Add the melted butter, both extract flavorings and evaporated milk. Mix these very well. Divide batter between the 2 pie shells and sprinkle the 3.5 oz. bag of coconut over both pies. Bake 35 to 45 minutes until the top is a light golden brown. Chill, serve and enjoy! This recipe does not support deep dish crusts. It will not bake correctly as 1 pie.

March 4, 2023 - New Subscriber since last week after searching Coconut Custard Pie recipes. Your recipe had me at EVAPORATED MILK. Got ingredients today, easy to make, used blender to mix easier since I have Carpal Tunnel in both hands, pie came out DELICIOUS! I’m from NYC and I keep telling everyone that women from South Carolina are the best cooks, you must be from South Carolina 🤣!

I love this recipe. I made this over a year ago for the first time. It's my husband's favorite. I love the fact that I almost always have every ingredient on hand. It's so easy to make these pies. I don't care for coconut usually, but these pies are absolutely delicious! Thanks for this video and your recipe.

My favorite pie, above apple. Used to eat a slice at a basement restaurant across the street from my small apartment in Pottstown, PA in the early 1960s. Mrs. Smith's shipped them from Pottstown for years, then went away. Will never forget those early memories, post University and working for Honeywell there.

Hi, these look wonderful! Could you use lemon juice instead of lemon extract? Thank you and God bless you real good 💕 🌿

The lemon juice isn't strong enough...better use extract. TFW God Bless, Linda

I think it would be safe to say a pie recipe could be doubled. This recipe makes 2 pies. Thank you for the compliment! TFW God Bless, Linda

Ok, I did make this..I have to say...it would have been better, if I had poured all of it, in 1 pie crust..I did have one pie crust deeper than the other...lesson learned.

+Estelle Butler Hi Estelle You must have used deep dish. The recipe, as written, is perfect for 2 regular pie crusts. I hope you enjoyed it (you didn't say) Thank you for getting back with me and thanks for watching and commenting.

... do you collect cookbooks ? i like ones from small town Churches & communities. Especially older cookbooks usually found at yard sales ! .. they will say use " Oleo", often, my daughter asked what's oleo !! in the 1970s, Grasshopper Pie was a favorite. Do you recall a recipe for that, or for Green Goddess Dressing, for salads ? Thank you. Todays pie looks delicious, & not as complicatdd as i feared !! ☘

Those are the type cookbooks I collect. In the last 5 years or so I've stopped looking or buying. I remember both those recipes and probably have them both in one of my old cookbooks. If you want me to make them just let me know. TFW God Bless, Linda

Marie, I've never made it any other way. You can use regular whole milk but the pie won't have as rich of a flavor. I hope this helps! TFW God Bless, Linda

2 cups (16floz/450ml) full fat milk or low fat milk* ⅔ cups (5oz /142g) white sugar Add the milk and sugar into a small, heavy bottomed saucepan. Heat it on a low heat until the sugar has dissolved. Once all of the sugar has dissolved bring the mix to a simmer over medium low heat. Do not stir once the mix starts to simmer otherwise it can crack and crystalize. Gently simmer for roughly 35-40 minutes, or until the milk has darkened to a creamy color, has reduced by half and thickened slightly. You may notice some foam forming on top, gently skim it off with a spoon. (if there are sugary bits hanging around the rim of your pot don’t stir them into your condensed milk, this can also crack your mix) When ready, remove from the heat and pour into a jar to cool. Let the condensed milk cool completely before putting on the airtight lid. Just note, it thickens up alot after a few hours in the fridge. Store in a labeled jar in the fridge and it will last for 6 months.
