There must be thousands of ways to prepare chicken breasts, and yet simple pan-searing is one of the best. It's quick and easy and the results are reliably tender, juicy, and flavourful. Win, win, win!
Serve them hot from the pan with a simple pan sauce like the one shown in the video, or chill and use later for salads and sandwiches.

PAN-SEARED CHICKEN BREASTS
INGREDIENTS
• skinless and boneless chicken breasts
• kosher salt and freshly ground pepper
• vegetable oil
INSTRUCTIONS
• Heat a bit of oil in a medium-sized frying pan on medium-high.
• Add the chicken breasts and sear for about 3 minutes on each side.
• When the internal temperature reaches about 68ºC/155ºF, remove from pan and allow to rest at least 10 minutes.
• Serve immediately or refrigerate.
SIMPLE PAN SAUCE
INGREDIENTS
• vegetable oil
• 2 small shallots, finely chopped
• 1-2 garlic cloves, finely chopped
• 1 cup chicken stock
• 2 tablespoons butter
• juice of ½ a lemon
• parsley, chopped
• salt and pepper to taste
INSTRUCTIONS
• In the same pan, heat a bit of oil on medium heat. Add the diced shallots and garlic and sauté until softened.
• Add the chicken stock and continue to simmer until reduced by half.
• Stir in the butter and continue to reduce the sauce until it's thick enough to coat the back of a spoon.
• To finish, stir in the lemon juice and parsley and adjust the seasoning.
