If I remember correctly from my undergraduate, the filets of a fish are "flaky" because they are made up of strips, or layers of muscle tissue separated by some connective tissue( I think called myosepta). I think it is this connective tissue that allows muscle to "pull" on itself when it contracts to curve the body of the fish and wave the fin so it can swim. When cooked, the connective tissue breaks down, which allows the meat of the fillet to break into flakes. The cheek meat I guess doesn't need to be layered like that since it just needs to pull on the jaw, so its like a solid chunk of meat. I would imagine side by side the cheek would have a similar texture to a single isolated flake of fillet meat, although that would be hard to do since the flakes are usually pretty small. I could be wrong; I'm better with physics than biology

Makes me think of my dad...walleye was his fish. Best freshwater eating fish. Seasoned a bit and then right on the grill brushed with some butter. Yum.

IMHO this series was one of the best on this channel, mainly because Jon and Spenser have good chemistry and there was a lot of interaction between them rather than Jon just talking to the camera. Would love to see more like this.

I live in Manitoba which is next door neighbors to Ontario and the walleye here are BEAUTIFUL! A good frying tip is to zipper the fillets then cut them into 2 bite chunks. Then roll the chunks in Franks red hot, then flour with salt, pepper, and garlic powder! Then fry in canola oil till dark gold! TO DIE FOR

I grew up cutting up walleye ( an I know he is a guide) but the way he cut it it up wasted a decent amount of meat and that’s just because guides have to be effective but dang did that look weird to me

I never take the mudline out of my eyes. Only cats and I seldom keep cats. Only fish I really eat are eyes, perch, crappie, and an occasional bluegill or pike

cade benson No the way he cut in you can usually keep the meat underneath of them as the ribs are attached to the belly meet if you cut under them the big rib bones stay together but the meat underneath of his ribs became really thin because he missed a whole lot instead of starting next to the ribs he cut level with the meat

Should try Lake Pakaskan fishing sometime. It's north of LOTW and we caught northern on almost every cast for an entire week. I was even catching walleyes on Daredevle spoons.

The reason walleye go so deep is because they love the colder water. Also, they are ambush predators and like to stay on the bottom and camouflage with the rocks and grass.

Furst time I caught walleye was in a river in northern california and didn't even suppose to be there. Hard fighting fish for sure. Very good eating as well. The first one I caught was about 20 inches and the largest of the day. They would hit almost everything we threw at them.

You should look into Hawk Air up in Wawa Ontario. My family has been fishing at Upper Duffy and Easy Point during the summer for decades, lots of walleye and pike and the experience is amazing. They also send me a Christmas card every year.

Good video John next time you fish for walleye try fishing 4 pm till 5pm and you will hammer them

There's an easier to fillet a walleye and get the same if not more meat. After doing the first cut on both sides you take the knife and make a little incision near the top and cut along the bones. Just gently rake it and you'll feel the bones. Saves on the knife and you don't get blood.

walleye looks a lot smaller to a fish we have in Europe called Zander; which has a long streamlined body, grayish “European perch” pattern, spiny dorsal fin and razor sharp teeth. The only difference is the colour walleye are more golden in comparison.

Hey John if you like those Walleyes come up to Muskegon lake in Michigan we are 183 miles north of Chicago from spring out in lake Michigan through the channel to the lake it self in summer all the way till it ice's over we pick up 6-12 pounders and even a 14.5 but those are the rare wall mounters but there up here amazing small and large mouth fishing as well during the day. Hit me up if your going to be in the area this year
