Hello Marion. I love your channel. For the Nuoc Cham, you can try this recipe from the Masterchef winner Christine Ha. IMO it has the perfect balance between sweet, sour and saltiness. It is super easy to remember, too! Ready? It is 1 : 2 : 3 : 4 for Acid : Fish sauce : Sugar : Water (notice how the ingredients are listed alphabetically, and the "acid" is lime juice). Add chilly and (loads of) garlic as you see fit and voila! If you prefer it with less sweetness, you can cut down the sugar to just 2 tbsp instead of 3. Please try it. It is so good.

I love Christine Ha and I'm so glad she won her season. The thing is, that's Christine's recipe. This is Marion's. Wouldn't be much fun and would completely take away from her channel if she was using other people's recipes.
@doodahgurlie3 жыл бұрын
@@runtwer5700 I'm actually glad he posted this as I wasn't aware of the combo used. I usually use the 3-1 ratio of water to everything else (a little less of lime juice, though). So I'm gonna try this and compare. And since this is a Viet person and Christina Ha is also a Viet person, I think there's merit as Marion isn't Viet but is Thai. Not saying her recipe isn't good, but there are a million different nuoc cham recipe (different dilution) depending on what type of Viet dish you're eating.

When I was younger and everyone else would order pho at the restaurants, I was the one who ordered the Viet noodle bowl dishes. This looks great...minus the glass noodle as I'm not a fan. I prefer the traditional rice noodle (vermicelli or bun in Vietnamese). Great recipe! :)

Traditionally, you'd see this made with charcoal grilled fatty parts of pork. There are also chicken and beef versions (growing up, my dad made a curried beef version cooked in a pan). If you're too lazy to grill (which gives it that amazing aroma and taste), then cook it in a grill pan, broil it, or even cook in a pan. Also, use regular vermicelli (called bun) vs using the glass noodles. Add sliced up Vietnamese fried spring rolls and you're in heaven. :)

Outside of Asia, especially in western countries for which these videos are actually targeted, salmon is the most accessible fish in the local grocery store, followed by cod, tuna and sometimes tilapia. For anything more, you need to go to ethnic or speciality markets which not everyone has.

Traditionally, it'd be fatty parts of pork used as the protein. But you can also you use chicken or beef (different versions of this, but my dad made curried beef cooked in a pan growing up). Grilling over charcoal gives the best flavor, but you can also use a grill pan, broil it, or cook it in a pan. Use rice vermicelli (called bun in Vietnamese) vs the glass noodle as that's how noodle bowls are typically made. I'm not a fan of the glass noodle in anything. :)
@nabeelkhan511003 жыл бұрын
@@doodahgurlie thanks for the insight!! I agree with rice vermicelli over glass noodles.. Glass noodles tossed in the dressing she made with a bit of kimchi stirred in I think would make a great cold salad
@doodahgurlie3 жыл бұрын
@@nabeelkhan51100 The only time I'd tolerate glass noodles is when it's combined with ground pork and veggies then used as the filling for the Vietnamese fried spring rolls or anything that's stuffed with that meat combo like tofu in tomato sauce. Otherwise, in an abundant amount eaten like that...yuck. In my mind, it should be minimized and put in the background.
