My family stems from the generational bowels of Louisiana. Yes, this is not too much different from the famed and flavorful recipes of ancestral dishes. Of course a tweek here or there, to each their own but this is revealing of our African and Caribbean connections. Many cultures around the world do not know or would not be willing to admit the impact of Black people's cuisines, enhanced and profound flavors, and seasonings on their culture's dishes. I mean, who was doing the majority of cooking and other labors.

Lisa, I made this today! Yum yum! I didn't have the mojo, but I know how to get that flavor, so I used the juice of a lime, juice of a tangerine/clementine (or half an orange), and maybe a heaping teaspoon or so of oregano, plus extra garlic. I added a whole hot pepper because I just had to. I skipped the Maggi and sazon (I know) and just added some beef bones I had in the freezer for the added flavor and some oregano. I was too lazy to grab yam, so I used the malanga and cassava I had already. I'm glad I did. I was too lazy to grab yam, so I used the malanga and cassava I had already. A great tip from my good friend, add a pinch of baking soda to that meat when marinating. It will be SO tender. I love the citrusy flavor of your bouyon, and the garlic was perfect, although it scared even me, the garlic lover that I am! I added a couple extra TB of your epis too. That butter is key, as is that heavy seasoning of the meat and cooking a good while with minimal water first! Thank you, thank you, girl! Pressure cooked that puppy for 15 minutes (Maybe do 12 minutes, natural release, and then cook dumplings without pressure so they don't get tough) after that precooking section after adding the spinach. I had all ingredients in at that point. Bomb! I think I might add a whole bag of spinach next time because I love it!
@lisascaribbeankitchen54822 жыл бұрын
Wow!!!! So happy it worked it for you and thank you so much for this very detailed comment that can help many people including myself adjust ingredients we don't have on hand. Pepper is completely fine I'm just amoung the very odd percentage of Haitians that doesn't like pepper and thank God I married a man that also shares my love for no pepper lol. Girl skip the Maggie but that Sazon brings life to the meat. Cassava and Malanga are delicious in Bouyon I add them when I'm not being lazy. I do the same thing with the baking soda, it works wonders😊 you'll never go wrong with garlic. I really enjoyed reading this review thanks for watching love and I'm so happy it worked out well for you 😊

@lisascaribbeankitchen54822 жыл бұрын
Hi Ange!! Yay so happy to hear this!! Next time will get even better!! About the butter did you make the same amount as me?? Remember the ingredients listed in the description box is based off a large pot like I was making but you have to adjust the amount to what you're making. 1tbsp in that large pot will be like not putting any at all. It also depends on the brand of butter you're using. Irish butter is high in fat so if you're using a high fat butter it can thicken your broth. Looking forward to your response and thanks for watching 💕

For the flour is it all purpose flour or bleached flour? I don’t know if one is better then the other
@lisascaribbeankitchen5482 Жыл бұрын
I always use all purpose flour which is normally bleached. I know that bleached flour is treated with chemical agents to speed up the aging process, but unbleached flour is bleached naturally as it ages so unbleached is probably better without the extra chemicals.

Please stop adding Maggi to your food. It's straight up MSG. Learn to make your own flavoring using tumeric, paprika, ginger, etc.

You have to put a in yellow yam in it and you have to cut the tomatoes like I'm not telling you what to do but I'm getting upset because I want you to cut the tomato and two that way when they put it in their mouth they could enjoy a big shop this is little and you did very well I thought it was just me that see that you were extra I see it from the beginning and I couldn't handle it I was like oh my God my goodness it's like I was watching myself and I don't like that very much so I'm just happy you you agree you extra like me I am very extra I love what I do because it's such a hard thing to do but it looks easy but it's not and then you have to have a big amount of God power to so congratulations happy Halloween but I think your food is more American because not because you speak English very well but just because I think it's more African-American then Haitian but you did your best shot and believe I love it
