In regard to the Legume, it is traditionally cooked with cube beef and blue crab apart from the vegetables you mentioned. As for the soup Joumou it is not cooked with chicken as shown but traditionally with T-bone steak apart from what you mentioned. It's when they move to the U.S., they add different meat but it's not authentic. As for the Cashew chicken it's a dish from the North, in Au Cape, Haiti which is delicious love it when my then husband use to prepare it (we love to cook). The Macaroni-au-Gratin didn't look appealing as it should and what they included in there was not authentic. Recipes will vary depending on what part of the Haiti they are from, but authentic dish should stay authentic. We also appreciate different cultures and their dish like Korean, Chinese, Thai, Japanese, Russian, Arabic, Israeli, Greek, Italian, Spain and so on. In our household growing up there were always had varieties and choices. Our family travel frequently abroad (and all corners of the globe) and brought back wonderful recipes which was incorporated in our daily cuisine. Food from different countries played a part in our home, so we are open in trying new things and enjoyed them. Haitian food uses only fresh herbs and spices and am a stickler for authenticity. It makes a big difference in taste. You think that's delicious, wish I could show you how it's really done when I make it (it's not a challenge, am retired now), and how we wash and marinate our meats prior to cooking which is so essential. And presentation is a big thing for us which lacked. I really enjoyed the video... and yes, I think our food is amazing depending on whose cooking... a saying! Love you video

Great job with this List. All those meals have traditional ways to prepare and depending on where you are in Haiti, you change what meats you put in. Legume is traditional with beef. Many put pork Beef and seafood. Legume also can have ckn feet pork or cow foot in them. Turkey and chicken ate not traditional in Legume. Pate comes in a couple different versions of well. Chicken and cashews is a traditional Northern Haitian dish, not easy to make. Anyhoo, I really enjoyed your list and would like you to do a list oh haitian foods influence by other cultures.
