Question whats the sheet should be...its like a tin cake or its like a biscuit type?

Hi Keith, for me it's a thin sponge cake. Since the dough is rolled very thinly, it may become biscuit like ( similar to graham crackers ) when baked over 8 mins then it will be soft when layered with the cream. Hope this helps. Happy baking :)
