Hello my lovelies! Today, I am making a very popular and controversial dish from West Africa, Jollof Rice. The most popular name for the rice dish is Jollof Rice. However, us Gambians and Senegalese call it Benachin or Thiébou Guinar Yap (chicken and beef rice) or Thiébou Djeun (Fish Rice). Gambians and Senegalese have different versions of this popular rice dish. We have the red and white version. Both can be made with fish or chicken/& beef. Today, I am making the most popular version, the red Benachin (Jollof Rice) with chicken and beef. The dish is prepared differently by different countries. Thus, causing a rivalry among African countries. The question is always “WHO HAS THE BEST JOLLOF RICE?” They are all delicious to me! However, I am preparing it the original and traditional way, Senegambia style. ENJOY!

Note: The ingredients used in this video are for 10 cups of rice, which is a lot. Ideally, you should cook about 5 cups of rice. Just divide all of the ingredients in half if preparing 5 cups of rice.
ROFF INGREDIENTS
• 2 handful or cups of parsley
• 2 garlic cloves
• 1/2 habanero pepper (add whole for more spice)
• Add 1 beef Jumbo cube and 1/2 tsp black pepper
* freeze any leftover Roff. Do not cross contaminate w/ chicken. Dish out the amount of Roff you think you might need in a separate bowl. If you need more Roff for your chicken, add more to your bowl.
PROTEIN SEASONING
• 10 chicken (A mix of legs and breast. Can use all legs or breast as well)
• 10 piece of steak (Can use Anh cut of beef, lamb or cow. Traditionally cooked with bone-in beef cuts)
• 4 cloves of garlic sliced
• 2 beef Jumbo cubes
• Salt
• Lawry’s Seasoned Salt
• Black pepper
FRYING / SAUTÉ
• About 2 cups of vegetable oil or conola oil
• Optional: 2 cuts of African snail called Yete
• 2 large yellow onions chopped
• 3 soft Roma tomatoes chopped
• A little over 1 1/2 cups canned tomato paste
• 4 garlic cloves chopped
• 3 dried bay leaves
• Salt
• 1 beef Jumbo cube
• 1 chicken Jumbo cube
• 2 Maggie cubes
• Knor seasoning
• Black pepper
• 10 cups of Basmati rice
* Note: you can pick to use either Maggie or Jumbo. Also, you can use just beef or chicken Jumbo cubes. I like to mix all
*Note: reduce oil before sautéing the onions if you want less oil in the dish. However, make sure you have enough oil so that the 10 cups of rice won’t stick together.
VEGETABLES
• 1 Habanero pepper
• 1/4 cabbage (insert toothpick in the center of the cabbage help prevent it from falling apart)
• 1 eggplant cut in 4 pieces
• 4 cuts of honeynut squash
• 4 large whole carrots peeled
* Note: Use as much veggies as you want. You can also use mixed vegetables instead.

Nothing to compare with Gambian and Senegalese Benechin Rice. I ate it for the first time at Friend house, he Wife is from Gambia. Is the best Rice that I have ever ate. Another great Rice is from East Africa, especially from Tanzania. The call it Pilau

I just made this and it came out really tasty. I only used chicken and I did not have snail but everything else was available. The part i struggled with was the browning of the tomato paste. I think I could have gone darker but it still tastes good

Yes, type in Jollof kingdom. The people there are Wolof. They are the main tribe of Senegal and Gambia. It's their tribe's dish, (it's like saying "Yoruba rice") and it was spread throughout West Africa as the Wolofs were Muslim allies with the Fulanis, Hausas and Mandinkas who spread it everywhere through trade and Islamization. People will try to claim what's not theirs, we should give credit where it is due.

How do you make yete at home for those who don't have access to it? How do you ferment the snail? Ghanaians use a fermented fish called momone, I wonder if it's the same fermentation process.

If am cooking this for home meals, I would only use either extra virgin olive oil or coconut oil because seed oils are not healthy for you. Hover, this is beautiful and well explained, I enjoyed the video.

Habibty amazing dish, I just felt like you could have blended your onion instead of dicing then they melt into the tomato sauce much quick and save you a lot of headache rather than dicing it into little cubes. I’m Pakistani we use the same oil onion and tomato base for majority of our curries and biryani.

Yes. That's the proper way to clean chicken. When the skin is left on it creates a fatty residue in your sauce.

Also a question on the pot: do you find these steel or aluminium pans work best for frying/browning of the tomato-oil-onion-spices mix? Wondering if some of the nonstick pans work as well…

You can find these pots at international stores. Check for the pots at African, Hispanic stores… Amazon and Walmart should have some (I search “African metal pots” on Google). I never tried cooking Benachin in a nonstick pan but it should work

I made the white fish Jollof as well. Scroll up to watch it. The cooking process is the same. Both the red and white version can be made using fish, chicken &/or beef/lamb. The chicken in the clay pot is called Poulet Yassa (Chicken Yassa). I have a video of that as well. I made it with couscous, but you can pair it with rice or salad w/ French bread.

Its because Nigerians and Ghanaians haven't seen Jollof rice of other countries, they make big mouth saying they have the best Jollof in West Africa, HELL NO!! Sierra leone 🇸🇱 Gambia 🇬🇲 Senegal 🇸🇳 have better Jollof rice than Ghana 🇬🇭 and Nigeria 🇳🇬.

I'm from Louisiana born and raised, and we call this dish Jambalaya (which originated in Senegal). The only difference is I prefer the Senegalese way, so much healthier and delicious. I'm creole by the way.

The difference between your jollof and Nigerian jollof is that you use tomato paste without fresh bell pepper and fresh tomatoes

She said in the video it's for added flavor and you can leave the snail out. My Gambian freind makes it for me all the time and doesn't add the African snail just eggplant, cabbage, carrots and whatever her choice of meat at times she'll add fish.

Good of you to discuss the (imho) ridiculous debates about Jollof rice; the fact that it’s named after an old Wolof kingdom located in Senegal should put all this dumb stuff to rest…i also dislike some of these youtubes where people of the same ethnic background harshely critique each other’s cookery without knowing or acknowledging anything of the historical context…makes Africans look like idiots and very negative, same for many older racist programs on Asian cuisines etc…
