I missed traditional mac and cheese with elbows, and I found some low carb ones on Amazon, made by 'Great Low Carb Bread Co'. Per 2 oz (dry) serving it's 7 net carbs - but I find that as a side dish half that much is a good amount on my plate. I make a serving, eat half, and eat the rest the next day. I really like Palmini for spaghetti, and for lasagna either the Palmini or salami slices as the layer - though I love the idea of deli chicken! I've also made the lasagna using a layer of steamed cauliflower (and now I want some, lol). Thanks for all the great recommendations!

Try making zucchini lasagna by adding a sprinkle of coconut flour on the zucchini layers. It absorbs the liquid and thickens up the lasagna nicely 😊

I opened a bag of angel hair Miracle Noodles two days ago and smelled nothing at all. No odor. I remember the stink of a few years ago, which was only temporary. They seem to have engineered the smell out. I love these versatile noodles.

I love them too however, they cannot be frozen. So beware if making a larger pot of say soup and you would like to freeze some for a quick meal- do not freeze miracle noodles!

It depends on the brand, I have found some other brands that barely smell. Btw, it’s the Konjac plant itself that smells. I like these noodles for stirfry though because the texture reminds me of rice noodles

I watched the lasagna video and made it for myself and my family. My husband knew but we didn't tell our 2 boys(17,19) who are both picky and want nothing to do with my way of eating. My husband and I were so surprised and said we would do it again , I actually have it on my meal plan for the next time I shop. Our boys had no clue and ate the lasagna like it was normal. I did fill it with a good amount of meat but still so happy?

The best thing I found for lasagna is Ketogenic Woman's carnivore noodles. Cut them into sheets for lasagna. Don't make them too thick. They are very sturdy and will stand up to sauce. I don't miss the pasta at all.

The only Palmini product I like is their rice. It's pretty good with sauses. Otherwise, Palmini taste has the texture of uncooked zucchini, which just isn't pasta-like. Miracal Noodles are better, but only work well with Asian dishes, I've found.

I just made ravioli out of them. I did seal them with a cornstarch slurry but didn't need much cornstarch. I will try again with a keto friendly "starch". I pressed the edges to seal also and did cook them in simmering salted water and they didn't separate and made a great substitute for ravioli.

I use them too, and my husband and I like it a lot. The first two times that I used them, my husband had no idea what he was eating, and I didn't tell him. He enjoyed them as much as I did. It's so much easier and faster to make lasagna now, and I can make a small amount of it if I want to.

I saw a recipe that works for Keto and Carnivore. Take some whole eggs and cream cheese. Blend it and pour on a parchment lined baking sheet and bake at 400° for 10 minutes. After you take it out of the oven, let it cool a bit. Take a sharp knife or pizza cutter and cut it in strips. You can use it for noodles, and top them with your favorite sauce or in your chicken broth for Keto chicken noodle soup. So yummy 😋😋😋

One of my favorite pasta replacements is one that was posted and played with extensively on the old, old Netrition board in the early 2000s. Later it was picked up and popularized by "She calls me Hobbit". I tweaked it a little and here's how I make it. Beat together: *2 cups water *1 large egg Stir into the wet ingredients and let rest for 10 minutes: • 6 T glucomannan powder (konjac flour) • 6 T oat fiber • 1 T baking powder • 1/2 t kosher salt • 2 Tbsp coconut flour put through a pasta maker or handheld extruder or roll out and cut into flat noodles. I've tried every other pasta replacement on the market, including that homemade one by Keto Asian Flavors, Kaizan, Emmi, homemade lupin flour noodles, you name it, and this is still right up there among the best of all that I have tried.

I had made a similar pasta with the oat fiber. Am now using bamboo fiber and like it so much better...adds similar texture without the sawdust effect. Highly recommend.

My issue with the Keto non-pasta pastas is that they don't absorb the flavers of the sauces, and the sauce doesn't cling to them because they don't have the extra wheat, which is part of the cooking process. My favorite way to cook real pasta is in the croc-pot with the sauce. The covers and flavors the pasta, and cooks it perfectly. Xanthan gum helps sauces to stick a bit better to Miracle Noodles, but it will never be the same.

I don't feel either the palmini or the zucchini noodles have vegetable taste I feel they are very neutral. The zucchini noodles in sauce freezes well & I didn't find they break down even after reheating. Though I do tend to make a thick sauce & don't cook them. Just drop them in the hot sauce & heat until it's all hot. But I have accidentally boiled the sauce & noodles while reheating from frozen & they were still great! AMAZING!! As You say it is just a vehicle to deliver Your sauce!! WIN/WIN!!

Just a note: - Konjac is a root vegetables grown in Asia ….. it is also known as glucomannan, it was banned here, as a supplement, in Oz because of its possible choking hazard and its tendency to block the stomach. 😳 Noodles and the rice are sold here and readily available …….. thanks …….. between them and edamame noodles we enjoy “spaghetti”, “fettuccine” and “rice” pretty often in our house. 😊 Thanks girls for another great video. 👍🏻😁😁❤️

When I make spaghetti I use zoodles (that I spiral). I don't cook or heat them before I add the sauce because the temperature of the sauce warms them up. If you like them a bit warmer/hotter add them to the pan with sauce on the stove (heat still on) for just 1 minute or less and serve them -- that way they are still raw and not watery. I love this substitution for pasta but then again I love zucchini especially with spaghetti sauce. Thought this tip might help.

Maybe you've done this before, but chocolate avocado mousse? Or different flavors of chia pudding? Egg roll in a bowl? How about little keto appetizers you can take to a party that non-keto people will eat. Like caprese salad on a skewer - mozzarella balls, prosciutto, basil leaves, grape tomatoes. Bacon-wrapped sausage-stuffed jalapeños with a dipping sauce. Crab stuffed mushrooms. Or, how about keto beverages? Fathead bagels. Cream cheese blueberry muffins. Different flavored almonds or pecans. There are a few suggestions.

When using zuchinni, I like to cut it into the shape I want and then put in my dehydrator for a bit. Takes away the extra moisture and leaves a "bite". I also make raviolo out of the larger zuchinni cut into rounds. I make big batches, freeze, and vaccuum pack for easy meals.

I made myself lasagna without the pasta. I just left it out since lasagna has so much flavor, I thought it would work. It did. It tasted great! I made regular lasagna for my hubby. Those Shirataki noodles can be rinsed in hot water and then boil them. That's how you're supposed to get rid of the taste/smell.

I made the "chris cooking nashville" ramen noodles, carnivore. They were pretty good, but fussy to make.. There was quite a mess, though. The utensils, sink, countertop, processor, kitchen towel and every thing else the raw chicken touched needs to be scrupulously. cleaned. I froze most of the resulting ramen, which will make it easy for adding a few into stir-fry sort of meals.

Thanks girls these are good tips. I tried the new cottage cheese viral thing several times with different cooking methods, oh boy, not successful for me. I just got cottage cheese omelette. I use the "miracle" noodles a lot, different thicknesses, called different things in Australia, but I have just discovered that I can get some of the others here, so will try them. I love the provolone pasta hack you girls taught .... we also use Palmini rice. I've done the sliced chicken breast for lasagne layers and enchilada’s - it worked for me. After all the other flavors i dont really notice its sliced deli meat. We also like the Aviate lupini noodle options and Healthy Noodles brand

Tromoncino/Zucchini Rampicante is even better than regular Zucchini. It had an even milder, slightly sweet flavor and is a tad firmer, so it holds up better. The really long neck makes it easy to shred with a regular shredder. I never use my Spiralizer anymore, just my box grater.

This was great! You are so right to encourage people to enjoy the flavor as it is. It made me realize that I have tried every “noodle” out there 😂 I like them all but especially Kaizen, Immi, and Noodle Revolution. I have also thinly shredded cabbage, seasoned and roasted it on a sheet pan and then sauced it. It’s actually good.

I love how you call them "zoodles" 😂 here in Ireland zucchini is known as courgette, so we call it "courgetti"😊

I have a bag of Miracle noodles. I may try tonight just so I don't go for Immune therapy tomorrow and be having a reaction to the lupin ones. Err on the side of caution till the Dr tells me it's OK the try them.
