I'm sharing a few recent meals with you and I also want to share a discovery I made that's been a real game changer in the kitchen. I'm talking about nutritional yeast. I share a few nutritional yeast recipes in this video.

One of the frugal tips I've used is put bits of leftover meat and veggies into a container in the freezer and pull it out to make a soup with it.

I use cut up slaw mix to make a rice dish. Start rice in rice cooker and add a teaspoon of turmeric. Fry ground beef, chopped onion and slaw mixture together. Salt and pepper to taste. Add another teaspoon turmeric and coat the mixture. When rice is done, add meat and cabbage to rice and stir. Steam for 20 minutes. Yummy.

Your soups looked delicious. I agree, soup is a great way to use up old or small amounts of leftover veggies and meat. Yummy and filling.

Soup is great, but here are some other recipes for leftover cabbage: Red Cabbage Apple Slaw Stir all together. Taste and adjust seasonings. 2 c sliced red cabbage, sliced 1 large carrot, grated 1 apple, cored, halved horizontally and sliced into small matchsticks 1/3 c mayo dash celery seeds 2 T apple cider vinegar 1 T maple syrup 1/4 t garlic powder s & p Cabbage Carrot Sauté ¼ cup olive oil 1 yellow onion 1 large garlic clove, minced some chopped green onion 3 Tablespoons fresh ginger ½ teaspoon hot red pepper flakes 1 head green cabbage, cored and sliced 2 large carrots, peeled and shredded brown sugar sesame oil a little soy sauce In a large pot, sauté yellow onion, garlic, green onion, ginger, and red pepper flakes in oil until soft. Add remaining ingredients, cover, and cook until tender. Serve over brown rice. Chinese Salad For salad: 1 small head of green cabbage, cored and shredded 3 small carrots, shredded 1 red pepper, sliced thinly into matchsticks Sliced scallions 1 package ramen noodles (discard soup flavoring), broken into chunks 1/2 cup sesame seeds or sunflower seeds 1 small package sliced or slivered almonds For dressing: [Use less.] 1/2 cup vegetable oil 1 teaspoon soy sauce 1/4 cup cider vinegar, plus a little more 1/2 cup sugar 1 T sesame oil ¼ teaspoon crushed red pepper flakes 1. Whisk together dressing and ensure sugar is dissolved. Dressing can be made a day ahead of time. 2. Mix together cabbage, carrots, pepper, and scallions in a large bowl, coat with the dressing, and refrigerate 30 minutes or more. 3. Toast noodles, sesame seeds, and almonds (Bake in 300oF oven for about 10 min.). Cool. 4. Toss together all salad ingredients just before serving. Coleslaw 3 teaspoons vinegar 1 teaspoon sugar Vegan mayonnaise (e.g., light canola oil mayonnaise) salt freshly ground pepper caraway seeds (optional) celery seeds (optional) slaw mix (or shredded cabbage, plus a little shredded carrot) Mix all together and refrigerate.

LOVE nutritional yeast! When my youngest daughter was growing up, she had a dairy allergy, I started using nutritional yeast in a lot of our dishes and we discovered how delicious it is. And yes, we use it on our popcorn too. 😊

I think the name should be changed. I mean....who wants to try something called nutritional yeast? 😂 this is the only reason I think I haven't tried it sooner. 😂 but obviously I've been missing out.

I grew up vegetarian and nutritional yeast has been a staple in my diet for most of my life. I am no longer vegetarian but still use nutritional yeast on a regular basis. I agree, it is soo good on popcorn!

As always....delicious food, thoughtfully presented. Roasted cabbage wedges with nutritional yeast is really good at a fraction of the cost of Brussels sprouts.

ok tell me more....you've piqued my interest. Are you just baking the cabbage? Putting any oil or anything else on it? Are you adding the yeast before baking?

I cut the room temperature green cabbage in wedges leaving the core so the wedges keep their shape. I line a baking sheet with parchment paper for easy cleanup. I put a liberal amount of olive oil on the paper then rubbing both cut sides of the cabbage wedges in the oil. I sprinkle salt, pepper, and granulated garlic on top. Roast the wedges in a hot oven at 425 degrees. When one cut side has browned, use tongs to turn the wedge over, allowing the other side to brown. In my oven it is 15 minutes on side one, 10 minutes on cut side two. When at your desired doneness, remove from oven and add nutritional yeast on top. I usually serve this cabbage with noodles. I take the cabbage off the baking tray then put the cooked noodles on the baking tray to collect all of the seasoned oil and yeast making for tasty noodles. Notes: room temp cabbage helps reduce cooking time. Any noodle works even budget friendly Ramen.

I made a big pot of soup yesterday cleaning out bits of veggies I had in the fridge… cabbage slaw included. I bought some a couple months ago on clearance and froze it to add to soups. You CAN freeze cabbage, just not as long as other vegetables!😄

I bought a two pound bag at Sam's club for 1.86. I thought I should have put it in the freezer. Wasn't sure how it would turn out.

I learned that you can make popcorn in the microwave in a paper lunch bag. You don’t have to use the premade bags of popcorn. I just get a lunch bag and put popcorn that doesn’t quite cover the bottom of the bag. Fold over the top a little, but make sure there’s room to grow . It’s about 2.5 minutes in my microwave. I won’t lie I usually melt butter in the microwave before I make the popcorn. This is so much faster and less messy than doing it on the stove and you can pour the butter into the popcorn bag and shake it up which will make it greasy so I had to put it in a bowl but I guess you don’t have to if you want to live life on the edge. I have never had any issues with it but I can’t vouch that it’s perfectly safe. I’ve been doing this for years now.. it’s cheap and delicious.

Thanks for sharing this. I get a pretty good deal on the popcorn at Samsclub but I've been giving some thought to making it myself. I almost never buy butter. I wonder if I would like it without it. 🤔

You can also put popcorn in a glass bowl, cover with a microwave safe plate and pop that way too. I use a pyrex bowl and a corelle plate to cover. Sprinkle with popcorn flavor when done.

A frugal tip I have is in regard to fresh ginger. I love cooking with ginger, but I can't use it up before it goes bad. So, I started peeling the entire root when I buy it using a spoon. Then I pop it into a freezer bag and store it in my freezer. When I need it, I just pull it out and grate the frozen, peeled ginger straight into the hot pan. It keeps my ginger fresh for longer, and by peeling it ahead of time makes it easier to use.

I will buy small fresh ginger knobs, put them in a bad and just freeze them whole. When I need the ginger, I just finely zest it peel and all. A lot of the peel doesn’t grate so it can be easily taken off. Is there anything wrong with using the peels? I leave the potatoes, carrots etc unpeeled.

@margaretwhiting3073 the only thing I've noticed about the peel is that my husband had a reaction to the peel when I grated my ginger with the peel left on. He felt like something was scratching his throat. Otherwise, I haven't had any issues.

Cucumbers are another vegetable that doesn’t need peeling. Also Chayote if you ever use it can be cooked with the skin on. We also cook our pumpkin with the skin on.

I usually peel some of my cucumber in stripes because the skins can be a little much, but I don’t want to lose all of them. BTW cucumber soup is delicious, I make it in the summer. I slice a mass of cucumbers really thin in the food processor, and cook them in a flavored broth with onions and dill. Then whiz the cucumber pulp in the processor or blender and put it through a strainer (seed and skin bits). You end up with a thick almost gelatinous soup to serve cold either as is, or with a shot of buttermilk or yogurt. It’s refreshing and super filling. I keep it in a quart jar in the fridge. Especially good when coming in from the heat or when you find yourself still hungry after dinner.

Celeriac in soup is better than stock and so flavourful. My Polish Aunty taught me this. And it's salt free! Nutritional yeast is a vegan staple. Boil potatoes and carrots. Add 'nooch' salt pepper garlic powder and onion powder. Blend. Easy cheesy sauce for nachos. Soak walnuts overnight. Add nooch and above seasonings. Add a little fresh water and blend for a yummy cheesy spread. No dairy required. I add smokey paprika because I love the flavour in my cheesy food.

I think your words will be in my head for a long time though when I think about this. 😂 Second, that's funny about the gnarly vegetables-they sure do taste good. I was going to say that my cabbage was already smelling bad but I didn't want my viewers to be grossed out! It tasted delicious!

I don't know how I missed this video before, but I'm watching now while cooking to the sounds of a much needed rainstorm in the Ozarks. I like to use nutritional yeast towards the end of cooking any large batch of refrigerator soup. You've also convinced me to use turmeric in these soups. This is another win-win.

If you smash your garlic clove with the flat side of a knife or the bottom of a bowl or glass it will release more of the natural oils & juices and infuse more flavor into the dish 😊 It's still super quick & easy & a lot less messy than chopping (you can also smash it before peeling the garlic & it will kind of just pop out of the papery skin!)

I only peel my potatoes when I see green on them . I mixed a little vinegar and water then scrub my vegetables to get dirt and bacteria off any vegetable or fruit. Love you recipes, thank you for sharing them.

Hi Michelle, That's the great thing about soup, no wrong way to do it. Also soup usually has so much color in it so it's good to look at too. Yeah, once again I have Trader Joe's nutritional yeast, ( we are food twins I swear) I was just reading a comment from one of your subscribers saying that nutritional yeast can be bad for migraines, I will have to look that up as I get migraines often. ☹️ I have some cabbage in my fridge and need to use it up so this reminded me to do something with it. Hi Charlotte 😁 oh that's terrible. Yeah Pat was saying that. I had no idea that it could cause migraines in people that suffer from them. That's terrible. I've enjoyed the added flavor and nutrition it provides, but I don't suffer from migraines. The job training is going well. We are still in the onboarding phase until March 😂 They hired a huge group so at least we are all going through it together.

That soup looked wonderful! I don't peel most vegetables as my mother said much of the goodness was right under the skin. Have you ever tried Hollyhock dressing? I had emailed you the recipe a while back. It's a mix of nutritional yeast with apple cider vinegar, nutritional yeast, tamari and oil and water. Can add garlic if you like. It's delicious on greens hot or cold.

I just found that email, I had saved it to try. 😁 I don't think I have Tamari. I have low sodium Kikkoman so I'll use that instead. Looking forward to making this...hopefully this week. Your vegetable soup looks wonderful! I always start my soup with a couple of tablespoons of oil (or butter for potato soup) with onion, celery and sometimes carrot. I also put the garlic in at the start, but have to be careful or it will burn. And I often put the herbs and spices in at that time; all that gets sauteed for about 5 minutes, then I add the liquid.....Carla H.

I used to saute the spices at the start but I've been so lazy with the garlic lately that I just throw it in...and surprisingly it's still very delicious. I also love celery and onions in mine.

When I purchase shredded cabbage, I use up in thirds. 1/3 for Coleslaw, 1/3 for stir fry, and 1/3 for soup. Of course I buy it on sale. The $store Louisiana I recommended before comes in plastic. There is a vegan cheese receipe that includes carrots & nutritional yeast

oh ok.....I think I got the wrong Louisiana hot sauce then. I'll grab the other one next time I'm at Dollar Tree. Oh I love that cabbage plan. I'm stealing that one 😂 That works nicely for my eating style. I just got a big bag of shredded cabbage at Samsclub today for $1.78. Yeah....I know what you're talking about, someone else just mentioned the vegan cheese sauce with carrots. I definitely want to try that one. Sounds yummy! 😋

❤ Soup!! Cabbage. Kale. Peeling veggies. Carrots I rarely peel. Potato 🥔 all depends. There’s always the option to cook them up separately and I know you have done that. Bullion I never use it but I do start my soups/stews with onion. I love Onion 🧅. I know you’re not fond of chopping them so maybe frozen would be helpful in your soup. Shredded cabbage is great too. Sauerkraut is a nice addition to soup with fresh cabbage. Nutritional YEAST thanks for the reminder. Have you tried making vegan Mac n cheese. Almonds and NY , boiled potato and carrots possibly onion. I forget what else . Cooking with Sammy makes this frequently. They are vegan. Thanks again my friend got the inspiration 💟.

I watch a channel of a vegan family travelling around Australia in a caravan and they use a lot of nutritional yeast. They make spaghetti bolognaise with either TVP or lentils and top with the yeast. Vegemite is also just yeast so it's a very strong umami flavour. I eat a lot of cheese and don't wanna stop!

My husband calls this “clean out the refrigerator soup”. I absolutely love it (and will try your turmeric twist)! But my husband is not as big a fan as I am. 😂

I've committed to eating down the refrigerator freezer so no grocery shopping. This weekend is soup for dinners with one frozen beef rib strip and handfuls of whatever frozen vegs. Had frozen pizza rolls hubs bought for lunch. Need to make some yogurt so that'll be one little starter out of the freezer. Monday - frozen sausage stuffed into sad looking mushrooms. Tuesday - mu shu with leftover sausage, bits of frozen vegs, cabbage and homemade Asian wraps. Wednesday - frozen ham with frozen whatever. Thursday - frozen whatever. Friday - froz....

I had no idea yeast had flavor. But I'm crazy about cabbage since it has a longer shelf life than other greens and it's filling. I prefer it to lettuce in tacos and some sandwiches now. Another thing I've done is throw older produce in a ziplock and freeze until it's full for a "surprise" soup that's always fun and different.

Nutritional yeast. I am gluten free and I use nutritional yeast in place of bread crumbs for meat balls. I believe it would be great for vegan 'meat' balls,

Been on the fence for some time about trying that n. yeast. Think I will give it a try, thanks A.M.! In my younger days Friday night was my popcorn night too! Instead of dinner I used to make a huge bowl just the way I liked it and chow down, those were good times!!

yeah...I think the nutritional yeast requires some playing around with and experimenting. Sounds like many of my viewers already know how good this is and use it in many different ways. Love the Friday nights 👍

I love nutritional yeast. I had no idea that Trader Joe’s sold it. My daughter figured out that she is lactose intolerant. My youngest has been dairy-free most of his life due to life life-threatening milk allergy so we eat limited dairy…mostly use it as a condiment. I personally hate vegan cheese and my son doesn't really like it either. My daughter loves cheese, though, so she still eats it. We buy aged cheddar which is naturally lactose free and she eats Greek yogurt.

My dad used to make soups of all the left over vegetables us kids would call them garbage soup he would only buy Caned chicken noodle and tamato and maybe mushroom

I like nutritional yeast so much I bought 2 lbs on Amazon. Like you I love it on popcorn . Its great to use in place of chicken bullion. Very Vegan friendly . Ive used it in soups casserole and even with cheese to reduce the amount I use. Dollar tree has a great salt free seasoning ive used . I hope they still carry it as I stocked up on it. Spike is a great low sodium seasoning thats been around over 50 years. Dan O's make another good low sodium seasoning . Your soups , dishes are colorful and taste delightful. Ive made similar ones this week 😊

Actually the seasoning around for > 50 years is Vegit i think Spike was developed a little later . The creator was Gaylord Hauser .

When I find something I like I'll get extra because sometimes they don't sell it anymore. It had a sour citrus taste to it . I have to do low sodium so always like to share a good product when I find it.

I've got some pork shoulder in the hot logic cooking for dinner later for my husband and I. :) I'm making a veggie pasta salad and coleslaw to go with it as well. I haven't eaten nutritional yeast in years. i forgot all about it. I wonder if my husband would like it.

It's going great. I'm a week in so far with onboarding. A couple more weeks of this before a couple months of training 😂 They hired a large group of us so it's nice to be all together. I think I'm going to enjoy it! Thanks for asking 🥰

I have not used nutritional yeast. I heard that it breaks down and acts like MSG in your body, and I get horribly dizzy wit MSG ,(brown rice, and a few other things). I just don't want to risk it. Carrots unpeeled are bitter. I also add whole cloves. My mother always added a small amount of oil to anything made with beans. A very few drops of sesame oil add a lot of flavor to a thin soup. I have noticed that a very little tiny or ground dehydrated bell peppers add a great deal to quick soups or sauces, without adding a real pepper flavor.

I looked up Nutritional Yeast the last time you mentioned it in a video. Unfortunately it can trigger migraines and because I have a history of migraines since I was 16, I would be afraid to try it. Bummer. 🙁 Thanks for the information about umami because I have a small bottle but have been hesitant to actually use it. I order things that sound good and interesting then get a case of "scaredy cats syndrome " 😂

I agree...I wouldn't try it either. Headaches are the worst and I can't imagine having migraines. That's terrible.

Ugh! Isn't it the worst (not being able to consume dairy)? Although, I can still eat cheddar without bothering me, and I did buy those Lactaid pills for every now and then when I want to indulge 😂

I roast all my vegetables to concentrate their flavors. Any leftovers go in the soup pot.

That's a good question. 🤔 I actually had to ask at Trader Joes last time. I think it was on the cereal aisle somewhere on the top shelf. 😂 Walmart carries Braggs Nutritional Yeast for over $5 and Walmart also has their own brand but they are poorly rated. I like the TJ's in the $3 range the best for taste but I've never done a side by side taste test, so maybe my favoritism to TJ's is in play. 😂

Any recipes with red cabbage? I already have braised with apple and cinnamon in the freezer when I made the mistake to buy a big red cabbage to make Turkish dōner style pickled cabbage. I don't know what to do with the rest. It's just waisting away in the crisper. I'm not a cabbage person.

That's so interesting so your cabbage ends up being kind of crispy in the soup...🤔 I would be interested to try it with half of the cabbage cooked and then adding the other half at the end for texture.

Warning: if you try any dairy alternative product it is very important to prepare yourself -- it will not taste like dairy, it won't have the same texture, and it won't have as much fat. I found nutritional yeast to be yucky. It certainly is not parmesan cheese. I've been eating mostly lactose-free for 30 years _and_ we are finally getting actual dairy products without lactose (my current favorite is Green Valley lactose-free cream cheese).

I'll have to keep an eye out for the Green Valley. Sometimes the Lactose free milk still hurts my stomach. I've also found certain brands of nutritional yeast that I don't like as much as the Trader Joes ones.

Looks delicious!!! My man friend doesn't have a carrot peeler so I have been scrubbing them in water with a small amount of vinegar and they turn out great, no waste!😉❤
