In Indian Classical we have an Instrument which is called 'Surbhahar' basically a bass sitar.

Yes. The instruments and musicians do seem to have their own solos going simultaneuously. Thats what I found beautiful about Classical Indian music. The spontaneity! Also with years and years or listening and performing it the musicians gain a subconscious understanding of what sounds good in combination with what and what doesnt.
