Pork belly and pork shoulder are usually the common and popular chashu, and they are delicious in their way. I am hooked since I get to try pork cheek - pork jowl (tontoro) chashu at Santouka Hokkaido Ramen. It's like pork wagyu; melt in your mouth chashu with superior juiciness and flavour. You can find this cut of pork at a butcher, farmer's market or a particular Korean/Japanese supermarket also carries it. Besides braising the meat, I also seared the pork jowl and reduced the sauce for an even more intense flavour. Alternatively, you can also use pork belly, and it's also one of my favourites. This is phenomenal in chashu ramen or chashu don (rice). Give it a try, and it will be the best pork you will ever have.

1/2 cup soy sauce
1 cup water
1/2 cup sake
1/2 cup mirin
1/2 cup honey
8 slices ginger
2 cloves garlic
4 green onions cut into half
