500g pumpkin puree 375g brown sugar 125g white sugar 500g water, divided 20g cinnamon 4.5g nutmeg 4.5g clove 37.5g fresh ginger, medallions 17.5g vanilla bean paste (25g extract if using instead) Big pinch salt (3-4g)

40 g / 12 oz for a latte. You’ll have to test on your own for any coffee!
