I'm italian and this appeals to my sensibilities, bravo the carrots can be lightly steamed as well, i suppose, instead of using the microwaves oven

I don't believe that's true. The results I get from a simple google search indicate that all cooking methods break down nutrients to some degree, and that microwaving can in some cases preserve more nutrients than other cooking methods.@@kevinbrianfahy

When you allow the beautiful Millard reaction to work its magic on carrots and even cabbage or cauliflower you end up with incredibly delicious dishes like this one. I’ve cooked like this many times and this was done so well. I’m sure this will tempt many of us foodies into the kitchen reaching for the produce drawer very soon.🥕

Lovely! I used Asian food mart's giant carrots (they didn't have black soy bean/nut mixture though so I used mixed nuts we always have on hand) - you have a great idea to first microwave the carrots - saves a lot of cooking time. I added fresh ginger, raisins, crystalized ginger, lemon, lime and orange juice - oh, and honey too! . . . wonderful! Thank you!

I love carrots, and my recipe for them is much simpler. I slice them in half like you do, and brush olive oil on them, and them I cook them over a charcoal grill. I will definitely give this recipe a try. Arigato🙏👍

@@matteframe I believe it's you who missed the point, which is: there is more than one way to achieve the same result. I get the same natural sweetness of the carrots, but with the addition of charcoal flavoring.

Wow! I have always had limited success in roasting carrots. But this looks great. There might be a lot of preparation involved, but I am sure the results are well worth it. Gotta try this for myself. ありがとう ございます
I thought the incorporation of sweet and salty flavors from a trail mix and cheese was brilliant! I'm going to try this as a meal. I want to try the microwave as well as a simmer like a triple cooked chip before the pan fry and butter baste and then make a meal of it on a bed of rice and spinach. I have a feeling it will be something I will prepare many times. Thank you for the inspiration.

I agree -- I could taste those carrots from here. I'm salivating. Like you I am not a huge fan of carrots, except in soups and stews, so am always on the lookout for recipes that make them interesting. I have two other terrific ones, with green grapes and marmalade, and with pineapple chunks and onion. But this goes immediately into the repertoire -- and tomorrow's lunch!

If you really want the carrot flavour enhanced just gently cook them in water with a little sugar and star anise. You'll get a much better more natural flavour, just enhanced!
Carrots are my favorite. When cooked, they are sublime and so is this recipe. I would love to find black soybeans, but I’ve never seen them in the US. I loved how you closed with “ a bientot.” That made me subscribe. Bon journee, M. George!🎉
