Terry, I created a very similar recipe. I take the skin off and cut the fillet horizontally. I use lobster meat and a homemade corn bread stuffing mix instead of potatoes. I sandwich the two fillets with the lobster stuffing, top with lemon slices and dill. I place stuffed fillet on cedar plank and roast it on the open fire grill. My fam likes spicy so I add some red pepper flake to stuffing...
