I work a a day training center for adults with intellectual and developmental disabilities. Where we work to teach our clients basic life skills, such as cooking. My clients love watching your videos, and I can turn your videos on without worrying if the video is family friendly. I also love how occasionally you add history about thedish you’re making, my clients find that information so cool and interesting. My clients have also found your videos easy to follow and easy to re-create and have often re-created some of your dishes. Im doing my own spin on this tonight using the ingredients I have on hand. I have codfish instead of salmon. For the stuffing l did cream cheese, feta, garlic, lemon, green onion and fresh chives. I do have caraway and will add that, too.

@@thefitzs Thanks, it was! My fish was pretty thin, so instead of slicing it to stuff, I laid the stuffing down one half of the fillet and folded the other side over it. I was worried the cheese would just melt and run all over, but it didn't. My fish took 12 minutes at 425°F in my oven. I served it over couscous which kind of countered the rich stuffing.

Thank you for this recipe! Am a huge fan of wild salmon. Tastes SO much better than farmed. Farmed salmon is paler in color, less “muscular” (because the fish are treading water in netted farms) and pumped with PCBs and other contaminants. And unfortunately that’s what most people buy - and what most people are served in restaurants. We can order wild fish from Wild Alaskan Company (or similar). Also, Trader Joe’s has wild salmon and other wild fish seasonally - more affordable!

Whenever I chop an onion, and I only need so much, I put the rest in a freezer bag and freeze it. Whenever I need chopped onion when I'm cooking, I always have frozen ready to sauté. If I need it fresh, obviously, I chop fresh. But when cooking it, you never can tell it was frozen.

Would it be okay if we make this with frozen salmon but defrost it first? The only wild caught salmon I can get near me is frozen from costco. All other places have fresh but farm raised salmon 😮

I don't think there is any reason why you couldn't use frozen salmon, which you defrost first. The wild-caught is the way to go!
