Hello everyone!
Today I made Peach Cobbler.
'Cobbler' is a dessert made with fruit filling and dough in a large baking dish and baked in an oven.
In the United States, it is a home-made dish that is very common at home.
(I think it's because it's so easy to make, can be made with simple ingredients, and can be applied to any kind of fruit. And it's easy, but it's really delicious!)
There are two ways of making cobbler.
The one is making biscuit dough and puttintg it on top of fruit filling,
and the other way is making a thin batter on the bottom and putting fruit filling on top.
I find the thin dough side to be much tastier to me, so I will introduce the second method.
Today, I made a peach cobbler using yellow peaches.
You can freely make a variation with other fruits like strawberry, raspberry, blueberry, apple, etc.
* If there is no yellow peach, can it be replaced with another type of peach?
The reason I used the yellow peach is that the most common variety in the United States is the yellow one.
Also I used yellow peach because it has a stronger acidity than white one, so it tastes better when used in a dessert that cooks fruit in the oven.
You can use white peaches, and nectarines, apricots and plums instead. And you can also make it with canned peaches. (It can be sweeter, so adjust the sugar content slightly)
▶Ingredients (For 11 inch x 7 inch oven dish) - This is enough for about 6 people. The batch is a bit large, so please check your dish size before making it.
[Peach Filling] - Fillings made in advance can be refrigerated for a day or two.
600g peaches (4 large peaches / about 5 small peaches)
150g light brown sugar (white sugar is also possible, but brown sugar is more recommended. It tastes better)
1 g salt
15g lemon juice
1) Cut peaches into wedges with or without peel, if desired.
2) Mix peaches, brown sugar, salt, and lemon juice, then bring to a boil in a pot and heat lightly until all the sugar is dissolved.
[Cobbler Dough]
100 g butter
120g All-purpose flour
140g light brown sugar (white sugar is also possible, but brown sugar is more recommended. It tastes better)
6g baking powder
1 g salt
200g Whole milk
A little ground cinnamon (if you don't like cinnamon, you can omit it)
1) Cut the butter into small pieces, put it in an oven dish, and put it in a preheated oven to melt it.
2) Put flour, brown sugar, baking powder, and salt in a bowl and mix with a whisk.
3) Add milk and mix lightly until there are no lumps.
4) Pour the finished cobbler dough into a dish over melted butter.
5) Pour all of the peach filling including the juice and sprinkle with cinnamon powder.
6) Bake in the preheated oven at 180 degrees Celcius for 40 minutes.
* Convection ovens such as Smeg/Gierra/Unox: 170 degrees Celcius for 40 minutes
* Storage: 3 to 4 days in the refrigerator (keep it tightly closed). If frozen, it can be stored for 3 weeks to 1 month, and be sure to reheat it before eating!
